    nice looking recipe. And I love the idea of adding the citrus zest. But, I want to say that if you were to use fairly hot water instead of cool, and if you let the dough rise in a warm place for about 2 hours for the first rise, you can make this bread in under 3 hours total, and still have a complex flavor and a decent crumb. Thanx for your efforts !

    Is it a must I need to bake with the Dutch oven? Can I divide them into bread roll and bake them instead?

      Yes! I’ve done as rolls and in a regular bread pan.
