If I ever get back to Napoli I will go to this place. The only pizza I've had while in Napoli was at Trianon. It was very good. Great to meet Diego and see how he does it. It's very hard to find pizza of this quality in southern Ontario. More likely in Toronto.
I like the way you described your trip for the best Pizza in Napoli. You choose the right time of the year (i like Napoli with the stormy rain), took the Cumana to land in a borough of Napoli still short of tourists.

I've never been to Naples, but I've been to Sicily a few times. And I know it's traditional not to cut the pizza before it's served to the table. But to me it's almost sacrilegious to see the beautiful Pizza being hacked apart with a dull knife, in order to eat it. Now I'm not suggesting they cut the pizza as they do here in the States, before serving. Thought maybe You can start a new tradition as this Master Chef did with a pair of scissors (at the end of the video). The pizza should be served to the table, with the accompaniment of a nice sharp pair of scissors to cut proper slices for consumption ?
