Mages are not the only one that give you access to every zone. Warriors do as well. Plus Hunters can get you to Highmountain and Druids to Valsharath. EDIT: Sorry. I misheard you the first time so edited my post.

I don't think you need to be friendly with every faction to get access to Uniting the Isles. I have several characters who have done it, but are not friendly with every faction. You should have access to it if you are level 45+. You might have needed to have completed it on at least one character, but I am not sure.
You have access to the quest as soon as you get to Dalaran. You need to reach friendly with the factions to complete it. And you only have to do it once on your account, for alts you take it and you immediately turn it in!

True, but imo mages are my favorite as they can teleport to their class hall aswell.
