Footplate crew are known to bake eggs and bacon on the shovel and take hot boiler water for coffee, tea and boil eggs.
We did bake pizza's in the natural gas heated industrial steam boilers.
So there is already a cuisine tradition, we just need some Chicken recipes.

I will note that Chiggen did operate in Snoqualmie Washington for a few years at the Northwest Railway Museum. Around 2019 it went to California.
I got a few Images of it running there. Should also be in the local paper.

I've been to Santa Cruz a bunch of times! I think I actually saw the Chiggen after it had been restored once several years ago on the Santa Cruz, Big Trees & Pacific Railway. I don't think I ever got to go to Pollardville, unfortunately, but I have seen what I think are some of the old tracks that No. 1 and 2 ran on. They might have been different tracks though, I'll have to look on my next trip out there.

Chiggin: I can relate! They called me Chiggin and Chicken.
    Duck: So what's the story?
Chiggin: I advertised a Chicken restaurant.
Duck: Oh! They only called me Duck because they thought I waddled.

0:07 The first 20 big boys were actually equipped for passenger service too lol, could’ve used a better example. Don’t forget that the UP Challengers were used in freight and passenger service. Even the 9000 Class 4-12-2s were used in passenger service if necessary (I have a photo of this in a book I own).

Hmm, I feel like I’ve seen a Portland Cement Co. engine somewhere between Springfield Missouri and Wichita Kansas. I have traveled that route many times, and thus can safely say I remember seeing a saddle tank engine with the name of Portland Cement Co. written on the side of said saddle tank somewhere along the way.

Oh, I have been waiting for this for a long time. I am a Santa Cruz County native, and Davenport is a short five-mile drive. Seeing the old cement company plant is surreal. It continued to be used until 2010, when Union Pacific ceased operations on the branch line after Cemex, a Mexican cement company, shut its doors on the site. Chiggen did return to Santa Cruz in July 2014 to run on the Santa Cruz, Big Trees, and Pacific Railway based out of Felton. We have been eager to see the engine return for a short visit in the future. However, the engine is now at the California Western, also known as the Skunk Train, in Fort Bragg, as that is also where Mr. Pappas is employed as the general manager of the railroad.

Let's not forget that Colonel Sanders got his start by selling fried chicken to railroad crews, so there is definitely a relationship between American locomotives and chicken dinners. An underrated steam engine. This video should help with some more country-wide and international popularity.

I had the awesome privilege to be able to ride a passenger train pulled by the Chiggen, as a birthday present a couple years back when it made a visit to the California Western Railway (Skunk Train) to fill in for the Mikado 45, which was being restored at the time and thus wouldn't be available for the Month of Steam the Skunk Train likes to do once a year. I love saddle tank engines, so I was honestly happier to be pulled by the Chiggen than the Mikado. It was a wonderful experience.

To answer your question, I'm not sure if cooking in an oil burning loco would be very healthy. Maybe if you sealed the pot and cooked it by heat transfer.
But on coal burners, shovel cooking is absolutely a thing
