Yeah for sure! Parboiled a type of rice you can get at the grocery store, Ben’s and mahatma are both at most grocery stores. They precook the grains and then dry them separately, so it comes dry like any other rice, but the texture turns out different and it cooks a little faster than standard dry rice. Because it’s been cooked and dried again, it has a ton of starch on the outside (more than standard rice). That’s gotta be washed off before making the jollof! Let me know if that helps!
I have a bit of experience with plantains Put them in a paper bag so it ripens faster. Once they get brown take them out of the bag and let it naturally get near black. Pray that the black is evenly distributed - sometimes it isn't because of how they are handled. The more they drop or hit them the faster they will "ferment" in that area. Also use a deep fryer. Don't be afraid to use one for plantains. Cook them at around 250 Fahrenheit. The slower you cook them the sweeter it gets for some reason. Hope you live somewhere where they sell good plantains. Most of USA doesn't have great quality. It's usually from central America or Mexico and I'm not a fan of those. A good fried plantain is supposed to be sweet and pillow soft without any grainy or dry patches. Thanks for this recipe!
