Personally, I prefer leveling the pointer on rabbits. Also you don't have to wait for them to land.
Also you don't need to have new animals for the skillups to work. For that, place the tent next to the rabbits/ducks. After a successfull skillup put the dog away to the kennel. Then activate it again, and point at the same pack of animals again. Repeat until lvl15.

If you own the bloodhound dlc then you can give your pointer the expert dog trait for tracking blood.
