Roasted Strawberries | Good Times with Jen

- From a Brie and prosciutto crostini to coconut ice cream, roasted strawberries take any dish to the next level.
INGREDIENTS:
Roasted Strawberries:
3 cups fresh strawberries, hulled and halved
¼ cup sugar
¼ tsp kosher salt
Roasted Strawberry Crostini:
French baguette
small brie wheel
sliced prosciutto
roasted strawberries
balsamic glaze
Olive oil
Roasted Strawberry Coconut Ice Cream:
2 cups full fat coconut milk
½ cup roasted strawberries, plus more for serving
¼ cup honey
1 tsp vanilla extract
Pinch of salt
chopped pistachios for serving
STEPS:
1.) Roasted Strawberries: Preheat oven to 375°F. Place strawberries on a parchment-lined baking sheet. Toss with sugar and salt. Roast for 20-25 minutes.
2.) Roasted Strawberries Crostini: Slice baguette into small rounds, brush with olive oil and toast in oven or pan until slightly golden. Top with prosciutto, slice of brie, roasted strawberries, and a drizzle of balsamic glaze.
3.) Roasted Strawberries Ice Cream: In a bowl, combine coconut milk, roasted strawberries, honey, vanilla, and salt. Transfer to a freezer-safe container, and freeze until set. Serve with more roasted strawberries and chopped pistachios.

Can the sugar step be skipped?
Not really.
The sugar here is used not exactly as a sweetener but rather to extract the juices of the fruits. You can use a lot less sugar than she did though...

Just Eat Life banana, pineapple, mango, papaya. tropical fruits
Roasted pineapple is AMAZING. You can slice them into slices or dice them, before using this same technique. It's great in that coconut ice cream base, with coconut whipped cream, and on oatmeal :)

I think the coconut ice cream you made is toooo "sweet" because you add too much of honey. Actually the coconut taste is basically sweet, so don't add any sugar and honey. If you wanna "not too sweet" or "mild", I suggest to add the little of salt.
Coconut milk/cream isn’t sweet at all.
You can't taste cold things as well room temp or hot things, so in this case, to compensate for that, more sugar is needed to achieve the proper level of sweetness. Plus, sugar is one of the things that helps ice cream be creamy. Without the honey, the ice cream will just be a solid brick of ice. Coconut milk isn't sweet in my opinion, at least none of the coconut milk I've ever tried so it definitely needs sugar because if the milk had any sort of sweetness, it would be lost when frozen.
Erdyanto Dwi Nugroho most recipes add a shit load of sugar so I’m gonna guess that they’re right vs a random internet comment.
