It's almost impossible to tell the difference in the flavor of the Blue Crab caught in US territorial waters. Purchase your crabs in the days leading up to the full moon, as crabs sluff/molt from their shells around the full moon. The majority of Blue Crabs served in restaurants aren't Maryland crabs, but from Texas and Louisiana. The problem is that you can get crabs year round from Texas and Louisiana while Maryland crabs are caught from mid to late March through early October. The JO verses Old Bay seasoning difference, JO makes 5 or 6 different seasonings, while I've only seen one version of Old Bay. A lot of restaurants like to use JO, as they can add rock salt (so it's less expensive) while Old Bay has salt already there. Some crab houses add black pepper for their own unique flavor. One thing in common, it's sacrilege to boil Blue Crabs.

Sorry people love your videos but I'm from down on the bayou in South Louisiana born on the bayou, I've been to Maryland numerous times I was a hot shot driver for the oil companies, tried crabs steamed up there my opinion our boiled crabs have better flavor steamed ok but not up to par like our boiled craps sorry Luke I'm 71 years old I just about tried everything.

How does the seasoning effect the meat if it’s in a shell? I’ve never had crab, I’m a landlocked Manitoba boy, I’m curious.
Normally after boiling or streaming the crabs. At least in Louisiana after boiling crabs we let the soak for about 10 to 15 minutes.
In Md, the season will get on your hands and as u eat, the meat/season stick together as u pick crabs
