I have the type of depression that makes it difficult to have the energy to do things like cook. My boyfriend takes care of me but has to go to another state for work starting next week. These dishes look delicious and appear to be easy enough that I can muster the energy to make them. Or prepare it on a good day and eat it the rest of the week instead of eating food out of its can. Thats a great idea! I have the same routine, which helps me a lot, so I can really recommend it. I get groceries delivered (eventhough it makes me feel guilty sometimes it helps so much) and prepare several banchan (korean sidedishes - like cucumber kimchi or mungo bean sprout salad) I can eat and add to my foods through the week. Every healthier meal is a win, but always remember: the fact that you ate overall is a win in itself. You got this!
Hi, I have the same struggle! Boiled potatoe is your friend, it goes with any food. Cooking frozen chicken directly in the oven in nice and quick too. Rice also, takes a little more attention to make it, but make a bunch so later you can make egg fried rice by just making scrambled eggs & dump the rice in there, keep cooking a little longer. I always throw some frozen veggies in the rice when first cooking it to get more vitamins/nutrients. A new one I found for using old rice, stuffed bell peppers! Cut bell peppers in half (remove centers & wash the peppers to get all the seeds out quick/easy). Rub oil, salt, & pepper on them. Put them in the oven 20 min. While that's happening, make ground beef in a pan, use more seasoning than normal, throw a can of black beans in it, your old rice, & some tomato sauce. Take peppers out of the oven, stuff them with your beef mix, put a slice of cheese on each one, put back in oven for 10 minutes or 15 (the cheese should be bubbling.
Obviously, I don't know your situation, (I have chronic fatigue, sucks to be me) but I have someone who comes to my house three times a week for an hour and prepares food for me. I also use the bags of chopped salad from the supermarket. I've tried Meals on Wheels, but around here, they're inedible. They may be better where you live., though. It may be worth giving them a try.
I'm wishing you luck and health preparing these meals while your boyfriend is gone :) hopefully you can even show him your cooking skills when he returns too!

Thank you for these beautiful simple recipes. I'm over my 60 now and I cook everyday for me and my partner and I appreciate simple, healthy and delicious recipes. I think that vietnamese cooking as well as other west asian nations cuisines are very tasty and healthy, especially (but not only) for older people, who need more vegetables and fresh food in their daily diet. When I was young in my country (Poland) we had not bad daily dishes recipes and people - however poor than - had better eating habits than now, they had to cook simple, healthy food for themselves. Now they often buy fast foods or ready-made products, full of unhealthy additions. I subscribe your channel, because you are so nice, brave girl with a beautiful sense of humor. I'm also over 60 and absolutely cannot eat fast food and I'm disabled so I also look for especially easy recipes. And for some reason, (um I guess because it's Winter here.. lol) I'm craving soup every single day!!

I use it as s substitute for salt in egg dishes and it’s really amazing, and i say this as a ukrainian, so a waaay different type of pallet 😊
I think almost every culture has a fishy umami salty concoction? So I guarantee it's not foreign to ppl, we just call things like anchovy sauce Worcestershire sauce.

Im Greek but I really only make Vietnamese food at home! I buy soo much GD fish sauce and soo many fresh herbs :D It's the best, happiest, freshest food ever.

So watching your cooking videos are so refreshing, I love how wholesome and simple they are. I just want every day food/meals that can be whipped out quickly after a long day of work. I love that you kept it so real! I don't measure when I cook, I substitute ingredients all the time. The main ingredient is love and it you cook it with love, it always tastes perfect. Buen provecho. ❤️
If you live in the US and want to buy MSG, but don't have an Asian supermarket near you, you might actually be able to find it in your local grocery store. Look in the spices section for something called Accent/Ac’cent. It is a staple in our house.
And if you live in Germany: Aromat (by knorr) is basically half salt, half msg. If you use it instead of regular salt, you'll end up with the same result.
Interesting, I'm Vietnamese from Canada and I've never had these dishes growing up. I was expecting to see thit kho trung (caramelized braised pork and egg), bun dau mam tom (vermicelli with fried tofu and shrimp paste, this was the ultimate lazy and tasty meal my parents made), com thit bam (rice and fried ground pork), dau hu sot ca chua (fried tofu with tomatoes) or com chien (fried rice), or chao (congee) Those are common comfort foods that are not too lahour intensive but I guess every household and region is different !

Even in Mexico, I have everything for all of the dishes except the 4th one in my fridge, cupboard, or freezer right now without going to the store. Even the fish sauce. (Although I do have to get some msg). I am going to do the cabbage for dinner today. I am so excited about being able to have a taste of Vietnam. I imagine that if your family's diet has a ton of veggie and soup dishes, it will be hard to gain weight even if you also eat pork fat often. I'm currently on a diet and most soups and all veggie heavy dishes (unless you deep fry them) have low calorie density, so they fill you up while not having that many calories. Y'all are definitely getting your 5 servings of fruit and veggies a day! Love that some of these dishes are vegetarian/vegan compatible! I might try the cabbage stir fry, looks tasty.
The lack of mass produced/pre-packaged food is huge. If a person were to eat this type of diet all the time with the OCCASIONAL standard American meal, they would still be healthy. Its when we start adding things like sandwich bread, chips, processed dressings, cereals, desserts, etc that we get in trouble.
I'm excited to try your recipes! I live in rural USA. The nearest Asian store is an hour away and very small. When I visit my family in big city I stock up on things like fish sauce, gochujang, gochugaru, bulk spices, curry paste, asian noodles (I love glass noodles) and ramens/pho/udon etc. Instant bibimmen I love so much. So cold, spicy and sweet. Its the only "fancy" instant noodles I'll buy online. They live 10 hours away though so I only buy shelf stable things. I haven't been in a few years because we have goats, chickens, dogs and cats so finding babysitter is hard.
This is so funny because I'm the opposite! I live in a state capitol city right near the biggest asian population, so I have multiple asian grocers within 5 minutes of me. I'm also close to Costco and Trader Joes. When I drive 600 miles (11 hours) to visit my family, I take orders for all the specialty items they want and load up my big Outback with all the good stuff. One time they gave me a quarter cow to take back for someone! I love being the food delivery for my family!
Just my family lives 10 hours away. Since nearest big city doesn't have good selection I tend to stock up there, I'm not sure where a good sized Asian store would be near me but over an hour drive at very least.
I'm vietnamese and a decent cook (since I was 10 I'm 27 now, I live in the netherlands so I cook all different types of cuisines) and in the recent years started learning the vietnamese dishes with my mom(who makes the best vietnamese food ever) and the internet. Its funny to see how vastly different certain staple dishes are in different households! I was shooketh watching this video. Still looks so good tho! I will try the coconut instead of cocorico next time
I made tomato soup yesterday and was questioning if to put an egg in it. Now I regret not doing it 😢 And omg I did the exact same thing to my nail peeling potatoes 2 days ago 😅. I feel your pain Uyen 😢😂

Love canh chua trứng, i usually put some tamarind powder and some msg too .. some of the grocery stores in Florida like Winn Dixie sometimes sells Thai tamarind and it’s so good

I love the tomato-egg-soup recipe; its my go to meal when I am sick or too weak to cook bigger meals. I tend to get cherry tomatoes & cut them in half for less prep work and add some rice in my bowl, topping it off with the finished soup, to make it more filling. Delicious!
Thank you for this Video Uyen! When I was still in school I worked at a vietnamese restaurant and after end of shift the whole staff would always have a big dinner together. I loved all the food but it's hard to find instructions for vietnamese home cooking so couldn't have it again for quite some time. The I made friends with a vietnamese guy, the first time he cooked tofu in tomato sauce I was transported back in time to the restaurant. I think I almost cried. Vietnamese food is the best!
I hope she continues the shallot and tomato base and make the fried or stuffed tofu in that tomato sauce. Also there's an amazing fried fish that also goes in that tomato sauce, which is one of my favorite things to eat growing up. She can also use it to add thinly sliced beef to make a beef soup (some people add watercress and such, but my parents just had the beef in theirs).
Seaweed and kelp naturally contain msg, while msg powder is artificially produced. "Artificial" doesn't mean it's bad, it's simply something you can't grow and harvest in a natural way.
@@Nevermore..I was gonna say disodium inosinate is also a natural msg-like salt made from seaweed but there still might be too much of it on Doritos 😅 I think Doritos are borderline addictive. Nothing quenches my desire for secret umami like them. Where can I get a package of that?

I love Vietnamese food. I have that same bottle of Three Crab fish sauce! And I just bought seeds to grow coriander in my garden. All the recipes so quick and easy and they looked beautiful, especially that noodle soup.

Hanoi Fried Fish with Turmeric and Dill (Chả Cá Lã Vọng) is my fave home-cooked Vietnamese dish. I ran across the simple recipe & I had to try it. My family LOVED it! My husband demands I serve it at least once a month. One tip, use scissors over a bowl to snip the fresh dill. Otherwise, your cutting board's gonna look like it's covered in lawn clippings.
@ If you like that dish, try the fish in tomato sauce. It's similar to the tomato sauce recipe Uyen used in this video. Just make sure to fry you fish then set it in the sauce. It's delicious! Maybe Uyen will keep using that tomato base and show us how to make it soon.

It’s incredible and delicious. I wanted to tell you I added 1/2 of a lime squeezed into the mix and I think it’s good. We’re diabetic so I’m always looking for recipes that aren’t high carb for breakfast and this is just perfect.. thank you so much and I’m gonna try your other ones too except we don’t eat meat so I can’t do those.
I moved from an area of america with a large korean population to an area where the nearest authentic korean grocery store is a 30 minute drive. Ive been learning how to adapt western things into my normally asian cooking, so videos like yours make me feel a lot more comforted about my situation ^^ I think once its in the budget, I'll make korean bone soup as tribute to your video!
Vietnamese food is my favourite cuisine and I cook it often. But I'm loving your home style dishes and haven't heard of most of them. Please include authentic ingredients for this who can get it. I'm in Australia and Vietnamese ingredients are easy to get.

this is the best type of recipe video! simple, delicious recipes that can be easily slotted into anyone's routine. i want to know every culture's lazy(ish) recipes so i can have the most diversity of different flavor profiles of my daily meals. super complex stuff i can only do once in a while. and simple recipes are usually just as delicious as the more complex ones!! thank you!

UA-cam "chefs" often don't do simple everyday cooking. Everyone is trying to be trendy and spectacular. I love stuff you can make in 10-15 minutes and jump up in the couch in your PJ's to eat in front of your tv. And watch more Uyen for example. 😊 This is good stuff! 👍🏻 PS. My current favourite BTW is Soba Gaki, or Japanese buckwheat dumplings in broth with whatever veg i might have.
I've tried a Chinese version of egg and tomato soup. It's basically the same, just uses simple yellow onions instead of shallots. It's really really good and super simple to make. I'll definitely try this Vietnamese version. Vietnamese food is amazing. I love that Vietnamese use lots of different flavours so it's not just spicy but also sour, sweet and salty. I love going to Vietnamese restaurants and my dream is to visit Vietnam.

I love coriander. I'm salvadorian (parents from El Salvador) so I usually use it in side dish called Chimol, which is chopped tomato, onion, coriander, and eat with corn tortilla chips :) I also add coriander in lentil soup!

Uyen! I made the tomato egg soup added some coconut amino acid and chili oil/ flakes with sourdough noodles to mine . Also did the cabbage stir fried . Add that to my tomato egg soup to add more veggies ! It was a hit ! I need to go buy some fish oil !
Definitely “put fish sauce into everything” it creates the savory and umami taste. It a MUST-HAVE spice in every Vietnamese kitchen and even when we live abroad, we always seek and delve in Asian market for the fish sauce. Yes, I’d love to see more videos like this. I love learning new ways to cook. As an American, I honestly don’t care for our food. I find it very bland and boring. I wish my town had an Asian Market. Our stores do have some stuff but it’s the American version. One thing that makes Asian recipes hard that I find usually, is that they all use Sesame Oil. I’m allergic to it. Luckily, we do have a couple Mexican Markets. I make Mexican a lot. Now I can make Vietnamese 🎉
We just found out my daughter is allergic to sesame, soy, and shrimp! And I make so much Japanese and Korean food! I hope Vietnamese food options might work for us too.
If you're allergic just leave it out I'm half Chinese and cook a lot of Asian food and tend to put sesame in a lot of things when I can find it but most dishes don't have to have it and if she's not allergic to peanuts get some unrefined peanut oil as a substitute the flavor is a bit different but it will still enhance the dishes in a similar way.

I make mine with chopped pork and some basil. Or if I have some shrimp I'll use those.

For those who can't find fish sauce, try Worcestershire sauce. The flavour is a little different, but it has a similar umami boost.

One thing i’d like to say to westerners, is don’t be afraid of fish sauce - it smells funky, but it adds sooo much more depth and complexity to your food. I use it as s substitute for salt in egg dishes and it’s really amazing, and i say this as a ukrainian, so a waaay different type of pallet 😊

in soup, if you wish to get rid of the funky smell of seasoning fish sauce, add it in while the pot is boiling.

I think almost every culture has a fishy umami salty concoction? So I guarantee it's not foreign to ppl, we just call things like anchovy sauce Worcestershire sauce.

If you use a regular onion, then add some chopped garlic. A shallot is a cross between an onion and garlic.

I love that you kept it so real! I don't measure when I cook, I substitute ingredients all the time. The main ingredient is love and it you cook it with love, it always tastes perfect. Buen provecho. ❤️
If you live in the US and want to buy MSG, but don't have an Asian supermarket near you, you might actually be able to find it in your local grocery store. Look in the spices section for something called Accent/Ac’cent. It is a staple in our house.
Many Vietnamese in the US use chicken powder/bouillon in place of MSG now.
It’s usually right next to the salt👍🏼 ( or at least it is in the stores in my town)
And if you live in Germany: Aromat (by knorr) is basically half salt, half msg. If you use it instead of regular salt, you'll end up with the same result.
I buy the Badia brand off of Amazon. It's 1.75lbs for $10? Maybe more- haven't bought it in a long time. It's last quite awhile since there's so much.

Interesting, I'm Vietnamese from Canada and I've never had these dishes growing up. I was expecting to see thit kho trung (caramelized braised pork and egg), bun dau mam tom (vermicelli with fried tofu and shrimp paste, this was the ultimate lazy and tasty meal my parents made), com thit bam (rice and fried ground pork), dau hu sot ca chua (fried tofu with tomatoes) or com chien (fried rice), or chao (congee)
Those are common comfort foods that are not too lahour intensive but I guess every household and region is different !

Even in Mexico, I have everything for all of the dishes except the 4th one in my fridge, cupboard, or freezer right now without going to the store. Even the fish sauce. (Although I do have to get some msg). I am going to do the cabbage for dinner today. I am so excited about being able to have a taste of Vietnam. I imagine that if your family's diet has a ton of veggie and soup dishes, it will be hard to gain weight even if you also eat pork fat often. I'm currently on a diet and most soups and all veggie heavy dishes (unless you deep fry them) have low calorie density, so they fill you up while not having that many calories. Y'all are definitely getting your 5 servings of fruit and veggies a day!

The lack of mass produced/pre-packaged food is huge. If a person were to eat this type of diet all the time with the OCCASIONAL standard American meal, they would still be healthy. Its when we start adding things like sandwich bread, chips, processed dressings, cereals, desserts, etc that we get in trouble.

When I visit my family in big city I stock up on things like fish sauce, gochujang, gochugaru, bulk spices, curry paste, asian noodles (I love glass noodles) and ramens/pho/udon etc.
Instant bibimmen I love so much. So cold, spicy and sweet.
Its the only "fancy" instant noodles I'll buy online.
They live 10 hours away though so I only buy shelf stable things. I haven't been in a few years because we have goats, chickens, dogs and cats so finding babysitter is hard.
This is so funny because I'm the opposite! I live in a state capitol city right near the biggest asian population, so I have multiple asian grocers within 5 minutes of me. I'm also close to Costco and Trader Joes. When I drive 600 miles (11 hours) to visit my family, I take orders for all the specialty items they want and load up my big Outback with all the good stuff. One time they gave me a quarter cow to take back for someone! I love being the food delivery for my family!
😂I've had my family bring stuff from their house as well. I normally just send back eggs and produce since they're shelf stable.

Just my family lives 10 hours away. Since nearest big city doesn't have good selection I tend to stock up there, I'm not sure where a good sized Asian store would be near me but over an hour drive at very least.
I'm vietnamese and a decent cook (since I was 10 I'm 27 now, I live in the netherlands so I cook all different types of cuisines) and in the recent years started learning the vietnamese dishes with my mom(who makes the best vietnamese food ever) and the internet. Its funny to see how vastly different certain staple dishes are in different households! I was shooketh watching this video. Still looks so good tho! I love the tomato-egg-soup recipe; its my go to meal when I am sick or too weak to cook bigger meals. I tend to get cherry tomatoes & cut them in half for less prep work and add some rice in my bowl, topping it off with the finished soup, to make it more filling. Delicious!

Thank you for this Video Uyen! When I was still in school I worked at a vietnamese restaurant and after end of shift the whole staff would always have a big dinner together. I loved all the food but it's hard to find instructions for vietnamese home cooking so couldn't have it again for quite some time.
The I made friends with a vietnamese guy, the first time he cooked tofu in tomato sauce I was transported back in time to the restaurant. I think I almost cried.

I hope she continues the shallot and tomato base and make the fried or stuffed tofu in that tomato sauce. Also there's an amazing fried fish that also goes in that tomato sauce, which is one of my favorite things to eat growing up. She can also use it to add thinly sliced beef to make a beef soup (some people add watercress and such, but my parents just had the beef in theirs).
Monosodium Glutemate, aka MSG, isn't artificial. It's a type of salt found, and extracted from, Seaweed and Kelp.
yep! the propaganda against it is just that- propaganda
Seaweed and kelp naturally contain msg, while msg powder is artificially produced. "Artificial" doesn't mean it's bad, it's simply something you can't grow and harvest in a natural way.
Also found in cheeses, mushrooms, and salted tomatoes :)

I love Vietnamese food. I have that same bottle of Three Crab fish sauce! And I just bought seeds to grow coriander in my garden. All the recipes so quick and easy and they looked beautiful, especially that noodle soup.

Hanoi Fried Fish with Turmeric and Dill (Chả Cá Lã Vọng) is my fave home-cooked Vietnamese dish. I ran across the simple recipe & I had to try it. My family LOVED it! My husband demands I serve it at least once a month. One tip, use scissors over a bowl to snip the fresh dill. Otherwise, your cutting board's gonna look like it's covered in lawn clippings.

@ If you like that dish, try the fish in tomato sauce. It's similar to the tomato sauce recipe Uyen used in this video. Just make sure to fry you fish then set it in the sauce. It's delicious! Maybe Uyen will keep using that tomato base and show us how to make it soon.

I really enjoy your channel and I love your recipe so I watch this very carefully this morning and immediately ran right downstairs and made the tomato egg soup for my breakfast. It’s incredible and delicious. I wanted to tell you I added 1/2 of a lime squeezed into the mix and I think it’s good. We’re diabetic so I’m always looking for recipes that aren’t high carb for breakfast and this is just perfect.. thank you so much and I’m gonna try your other ones too except we don’t eat meat so I can’t do those.
I moved from an area of america with a large korean population to an area where the nearest authentic korean grocery store is a 30 minute drive. Ive been learning how to adapt western things into my normally asian cooking, so videos like yours make me feel a lot more comforted about my situation ^^ I think once its in the budget, I'll make korean bone soup as tribute to your video!

UA-cam "chefs" often don't do simple everyday cooking. Everyone is trying to be trendy and spectacular. I love stuff you can make in 10-15 minutes and jump up in the couch in your PJ's to eat in front of your tv. And watch more Uyen for example. 😊

I've tried a Chinese version of egg and tomato soup. It's basically the same, just uses simple yellow onions instead of shallots. It's really really good and super simple to make. I'll definitely try this Vietnamese version.
Vietnamese food is amazing. I love that Vietnamese use lots of different flavours so it's not just spicy but also sour, sweet and salty. I love going to Vietnamese restaurants and my dream is to visit Vietnam.

I love coriander. I'm salvadorian (parents from El Salvador) so I usually use it in side dish called Chimol, which is chopped tomato, onion, coriander, and eat with corn tortilla chips :) I also add coriander in lentil soup!

Uyen! I made the tomato egg soup added some coconut amino acid and chili oil/ flakes with sourdough noodles to mine . Also did the cabbage stir fried . Add that to my tomato egg soup to add more veggies ! It was a hit !

As an American, I honestly don’t care for our food. I find it very bland and boring.
I wish my town had an Asian Market. Our stores do have some stuff but it’s the American version. One thing that makes Asian recipes hard that I find usually, is that they all use Sesame Oil. I’m allergic to it.
Luckily, we do have a couple Mexican Markets. I make Mexican a lot.
Now I can make Vietnamese 🎉
We just found out my daughter is allergic to sesame, soy, and shrimp! And I make so much Japanese and Korean food! I hope Vietnamese food options might work for us too.
If you're allergic just leave it out
I'm half Chinese and cook a lot of Asian food and tend to put sesame in a lot of things when I can find it but most dishes don't have to have it and if she's not allergic to peanuts get some unrefined peanut oil as a substitute the flavor is a bit different but it will still enhance the dishes in a similar way.
