  • Fragrant, moist and soft, this Healthy Orange Cake with Oats (Oatmeal) & Jaggery is made with freshly squeezed orange juice and fresh orange zest. Bursting with fresh orange flavor, this cake is a treat to smell and eat.
    This healthy orange cake recipe is easy to make and only gets better over time.

    Ingredients:
    Eggs: 2
    Yogurt: 3 Tsp
    Orange juice: 1.5 Cup
    Orange zest: 1 Tbsp
    Olive oil: 2 Tbsp
    Jaggery (powdered): 3 Tbsp
    Oats flour: 7 Tbsp
    Whole wheat flour: 3 Tbsp
    Baking powder: 1 Tsp
    Baking soda: 1 Tsp
    Vanilla essence: 2 Tsp
    Dates (chopped): 2 Tsp
    Walnuts (crushed): 2 Tsp
    Cashew nuts (crushed): 2 Tsp
    Almonds (crushed) : 2 Tsp
    Method:
    In a large mixing bowl, whisk 2 eggs. Next add yogurt, jaggery, olive oil and orange juice and mix well. Once mixed well, add oats flour, wheat flour, baking powder and baking soda. Mix well. Add Orange zest, vanilla essence and dry fruits of your choice to the mix. I have added chopped dates, cashew nuts, almonds and walnuts. Mix well. Pour the mix into a greased baking tray and bake at 350°C for 20 minutes. Enjoy healthy and tasty Orange cake with jaggery!!
