- I got some news, GNB fans. I'm trying out for the next season of the Next Food Network Star and this is the audition video I put together for the powers that be over there.
Food was always a big part of my life. Whenever we'd get together, we'd do it over food. And my mother, she would fill the table with her excellent food and lots of it. If we had roasted peppers, everyone had to have enough roasted peppers. If we had pasta, everyone had to have enough of the pasta. Everything had to be in abundance.
One of the dishes she made that I loved was spaghetti aglio e olio. Or spaghetti ayool, as we called it in the old neighborhood. It's about as Italian as it gets: a few ingredients all of excellent quality cooked simply to let each shine. In each bite, you get a little bit of the pasta, a little bit of the oil, a little bit of the garlic, a little bit of the spice. It's an excellent dish that I'm so happy to share with you.

You'd be incredible to see on Food Network, and actually one of these reasons why I'd start watching it again. The channel needs to bring back more actual cooking shows, and your classics have proven delicious and incredibly enticing to follow. Best of luck with the audition! Ciao!

Food Network has other priorities, like airing reruns of Diners Drive ins and Dives for 6 hours a day every day, and 8 or 9 new contest shows every year where washed up B list celebrities and bloated alcoholic singers from the 70s must cobble together a 4 course gourmet meal out of raspberry jam, Velveeta, and a bucket of rotten old fish heads, and cook using only a butter knife, an ironing board, and a hair dryer. and all 9 new shows are hosted by Guy Fieri, everyone's favorite tour guide to Flavortown.
Food Network used to have quality programming. Now they're just embarrassing.
Back at last, Its great to see good old Italian recipes, Looking forward to seeing more molto grazie .

Love your videos and I've learned many solid techniques from you as well as enjoying your old time Italian recipes. My wife and I are avid NFNS watchers and the chance of having you on it would be a hoot! Almost like a "friend of ours" being on TV

Just whipped this up and man, is it killer! It's that anchovy melted in the oil... makes it so tasty. Best Aglio e olio I've ever had. Thanks Gianni! Btw, Food Network really missed out.

Whoa, that's some great news, Gianni! I couldn't think of a 'TV Star' I'd rather watch than you, doing your magic ... and I couldn't be happier that you chose Spaghetti Aglio e Olio as your audition dish! It's been a lifetime favorite of mine (although for perverse reasons I often prefer perciatelli here ... I like a little challenge at the dinner table, y'know?).

Yeah I know what you mean about the perciatelli. It's fun to eat and gives you a bigger pasta oomph in every bite. If I really want the pasta more than the sauce perciatelli or bucatini float my boat. Keep on cooking.

Food Network: Your channel needs more _actual cooking shows_ and less Guy Fieri eating things. I miss the days of _Molto Mario._ Gianni is a great cook and personality who is entertaining, engaging, and very straightforward. This is the sort of programming I want to see on your channel again.

ciao gianni! pasta ayool...pasta fazool...do i smell a pattern there? a goodsmelling pattern, that is. good to see a new video by you. i do my ayool with butter. i just melt some butter, then i infuse a shitload of aglio in it, and then the spaghetti....enjoy, mangiare! and do you need more? no. beautiful and tasty. maybe a bit of guanciale as extra treat. and yes, some sprinkled cheese.

I tried Amazon and the pasta from Italy is about 15$ a lb ! however I found that Kroger/Dillons in Kansas have a brand called The Private Collection and the pasta is made in Italy from an area you mentioned in another video and with the seminola wheat and the bronze dye . . . .less than 2$ a lb I purchased 4 pkj's one of them is like spaghetti only hollow and a little thicker . . I used that pasta today with your special gravy MMMMM Good ! now I have some church potluck during Passover that I will bring a big pot of the gravy and pasta to. . .can't wait for the smiles that will be on their faces when they try it ! I will order the EVOO soon.. . .by the way the gravy tastes amazing even cold ! ! !
Ciao Phyllis. That hollow thick spaghetti is bucatini. It takes a bit longer to cook but I love it when I want the taste of the pasta to stand up to the sauce.
