Sattu can be one of the healthiest food, excellent for dietetics, heart, high protein, high fibre, low fat, and readymade, high shelf life and good for stomach
Bihari sweets, which are sold in local open markets are generally very sweet! The reason being that Bihar used to be the sugar bowl of entire subcontinent till a bit after independence, when agricultural policies shifted sugarcane farming to Maharashtra. Unfortunately, it took a huge toll on Maharastra's soil fertility and water table. In Bihar, water table in Kosi area is around 6feet! SIX FEET! Sugarcane is water intensive crop and is best grown in water rich states! So the taste bud still has the sweet cravings for holloi polloi and people engaged in laborious work! To balance the taste, there is a generous use of green chilly being eaten raw. You would find green chilly being served separately with meal in almost every house hold. Or being served with samosa, kachori, litti, kachri, bhuja! Another thing which is a bit peculiar to Bihar is the chutney served with these fares is very different and unique. You would find some shops selling Samosa with Dahi Chutney, or Barabar ki chutney, Ol ki chutney, Gulhar ki chutney! Then there is this Kachri wala near to that Blue Moon Roll Centre, who changes the oil in which Kachri is cooked and chutney as per Nakshatra. He shifts to frying in mustard oil, once the Adra Nakshatra arrives, and changes the chutney with some other Nakshatra. Aadra Nakshatra announces the full presence of humidity in weather! Biharis celebrate Aadra by eating Sattu Puri and Mango in that Nakshatra, actually that is elder's way of saying Mango must not be consumed now onwards. Use of mustard is extensive, in Bengal's food culture it is still in moderate form! Bihari fish curries has to have that 'sondhapan' of sarso! Semblance in taste could be found in North East Bihar and Western Bengal region, and still there is a lot of difference. Another thing which Dhanarua Fish thing has missed is usage of posta dana/poppy seeds in preparation of fish in normal Bihari houses! Bater/Quail is a regular fare in most dhabas/line hotel/restaurants frequented along with other birds. Historically, chicken wasn't the main staple of non vegetarian food. Mutton, quail, fowls, and other birds were. Preparation style is quite different. Very difficult to find people who cook it in authentic way!

I grew up in Karnataka, but my dad was transferred to a small town in Bihar called Sheikpura. We lived there for three years. Though we did not eat out a lot, the times we actually did are very memorable. I particularly remember Rasmalai in Sheikpura and Chowmein I had in Patna. Our neighbours were generous and would often invite us for dinner or send over food. The taste of fish fry in Mustard oil, Litti Chokha, Rabdri is still fresh in my mind after all those years. I want to go back someday and actually taste the food again.

I think Biharis are themselves responsible for their fate. Bihar is one of the richest state in natural resources and fertile soil still Bihar is the most backward state in the country in all parameters. The reason is that Biharis are non-progressive, they are content with whatever they have, also Caste matters more to them than development. If these things continue then even after 100 years, Bihar will remain the most backward of all states. Biharis need to change themselves, Bihar will automatically change.

So many memories of Patna has resurfaced after watching this video. I was living in Ashiyana digha road at that time. Still remember the famous Biryani Mahal (original one). It used to be my favourite eating space. Also getting nostalgic remembering those delicious Litta Choka of Maurya Lok complex and Kachori Chana i used to have during my office break at Frazer road. Good to see Bihari cuisine finally getting some attention. Credit to the channel for covering it brilliantly. It was well overdue.

Bull shit......if you compare poverty, crime,social unrest, death due to preventable diseases etc among all states who have similar economic status as bihar you will notice that these parameters are significantly higher there. Criminal mentality, disregard for laws, lack of civic sense and etiquettes are hallmark of Biharis. Here in South, we use the term bihari to denote anyone showing these antisocial traits

Biharis are very simple and sweet people.they are rustic and clean hearted.sorry to say politicians and caste system has failed them.The whole country and industry run on the strength of Bihari workers but they are underpaid because everybody knows that they are uneducated and less opportunity back home.

I think Biharis are themselves responsible for their fate. Bihar is one of the richest state in natural resources and fertile soil still Bihar is the most backward state in the country in all parameters. The reason is that Biharis are non-progressive, they are content with whatever they have, also Caste matters more to them than development. If these things continue then even after 100 years, Bihar will remain the most backward of all states.
Biharis need to change themselves, Bihar will automatically change.

So many memories of Patna has resurfaced after watching this video. I was living in Ashiyana digha road at that time. Still remember the famous Biryani Mahal (original one). It used to be my favourite eating space. Also getting nostalgic remembering those delicious Litta Choka of Maurya Lok complex and Kachori Chana i used to have during my office break at Frazer road.
Good to see Bihari cuisine finally getting some attention. Credit to the channel for covering it brilliantly. It was well overdue.
