With Thanksgiving just a couple of days away, I have been reflecting on what I am truly thankful for having in my life, and after this video, I am truly thankful for having a toasty warm dwelling for which to call home. There is a special feeling to enjoy when the first snow arrives. Calm, rest, I earned my living as a gardener in CA for thirty years before moving to Montana. My first winter was so serene. I had a couple of months off to rest or cultivate other interests. The quiet beauty still brings my great joy. Your meal was a perfect stick to your ribs warming dish. May you be filled with peace. The snow is very pretty watching it on your video. I too love to see the seasons change. I used to love snow when I was young. However, at my age the only way I like to see snow is like this.
Thanks for the dinner idea. The kids cleaned their plates! My daughter did complain about the store bought eggs, but her ‘girls’ haven’t laid any for a bit..
I know hot and cold are relative, but I shivered when you said it was fifty-seven in the van, and it was "nice and toasty." Yeah, better than sub-freezing outside, but I'm the type of wimp who fires up the heat when it's below sixty in my van. :D
The Loco Moco looks incredible. I have never heard of it but will have to try it soon. It sounds like the perfect comfort food. I saw online some recipes for it with spam instead of hamburger, that sounds like another healthy version, NOT! I will plan on trying both. Thanks for another great video.

You can tell how much you love it by the expression on your face while out there walking. That meal with the fire roasted burgers and the rest looked delicious too. It doesn't get much better than eating around a campfire while enjoying nature.
I love how you live in the now. I have lived with four seasons all my life and as I get older, I dread winter. I loved that you are excited by the snow. Everything is about 3 months here each, Spring, Summer, Fall, Winter. Just when I'm tired of one season, the next begins. Perfect. Your food looks delicious. I've already eaten, but you're making me hungry! One last comment, your whole demeanor is so changed from when I watched your years ago when you first started van life. You are so relaxed and truly happy looking! It's amazing. I'm so happy for you.
It would be awesome if you could make a program about the evolution of your van builds. It would be neet to see your different vans and builds in one show!!! You could also talk about what you've learned over the years about solar energy in your application. Just a suggestion. Been watching since maybe 2 episodes before you left San Diego. I had a diesel heater in my work truck the last several years of Truck Driving. It always worked great. I didn’t like the tick tick noise from the fuel pump. I’d wear earplugs to sleep. Idling a semi uses about 1 gallon per hr so the diesel heater pays for itself quickly.
For me watching my dog frolicking in newly fallen snow is pure joy. 🐕
I wish I could appreciate snow that much. After 50 years, I'm just over it. Lol.
