we have such a broad spectrum of different microclimates in australia,with alot of diversity in eatable flora and fauna, ben obviously knows about this! a true chef sources he's own produce, but there is nothing like finding free food in the wild. it's an unreal experience! The flavour of wild food is much more superior than any organic produce you'll ever come across! this isn't a food trend to true chefs, its a way of life. everywhere i go my eyes wander, trying to identify plants. great clip!
