- This is a simple and easy to make recipe of Goat Masala dry fry. A comforting one pot dish you can make on any day of the week that you and your family will enjoy.
INGREDIENTS NEEDED
2.6 lbs ( 1.2kg)Goat meat
2 Tbs Vegetable oil
Salt and pepper
1 Onion, diced
1 Tsp Coriander powder
1 Tsp Cumin powder
1 Tsp Chili powder
1 Tsp Garam Masala spice
1/2 Tsp Turmeric
1/2 Tsp Paprika
3 Sprigs thyme
1 Sprig Rosemary or 1 Tsp chopped of both
1Tbs Garlic, chopped
1 Tbs Ginger, minced
1 c Beef stock
1 Tbs Worcestershire sauce
1/4 Cilantro to cook and garnish

Being from the Caribbean (Jamaica to be exact) we traditionally wash our meat first with lime or vinegar. The major difference I would use to speed the process up is use a pressure cooker. The dish looks fantastic!

Some Caribs use flour and water wash because they say the citric acid in the lemon toughens the goat. I have done both and I must say I prefer the flour water wash.

This is so very close to dry mutton dish that we make here. A small variation of this is riqstung and grinding the vegetables except for bell peppers so it gives a nice thick gravy. 2nd variation is to use green chillies and pepper in place of paprika. We get a very dark finish.
