    材料
    📌 急凍豬脷2條
    📌 洋蔥大半個
    📌 蔥頭5 - 6粒
    📌 蒜頭5粒
    📌 香葉2塊
    📌 桂皮少許
    📌 八角1粒
    📌 丁香4粒
    📌 蕃茄1個
    📌 茄膏少許
    出水材料
    📌 薑適量
    📌 葱段適量
    📌 紹興酒適量
    調味材料
    📌 酒2茶匙
    📌 喼汁半茶匙
    📌 鹽小半茶匙
    📌 冰糖2細粒
    📌 豉油少許
    📌 水適量 (可參照提示)
    裝飾材料
    📌 迷迭香2條
    做法
    1. 準備煲,煲滾水,落出水材料,再放入豬脷出水。大約4分鐘後,拿出豬脷,用清水再洗乾淨。
    2. 洋蔥切片,蕃茄切塊。
    3. 準備煲,落油,爆香洋蔥,蔥頭,蒜頭,再落香葉,桂皮,八角,丁香,之後落蕃茄,再兜勻,最後落茄膏,兜勻。
    4. 豬脷放入,再加入酒,喼汁,兜勻,再放鹽,冰糖,再兜勻,最後落豉油,水。
    5. 大火滾後,轉細火炆45分鐘。之後試味,如果不夠味可再落少許豉油,再轉大火收汁,此時,桂皮,香葉,八角可拿走。
    6. 豬脷可拿出切一片片,上碟,再淋上汁,放上迷迭香伴碟,即成。
    提示:
    1. 豬脷出水時間要長些少。
    2. 豬脷出水後應該沒有臭味。
    3. 蔥頭,蒜頭,不用切。
    4. 八角如果大粒就用1粒,細粒就用幾粒。
    5. 如果用普通煲,炆豬脷的水要蓋過豬脷多少少。
    6. 如果用高速煲,炆豬脷的水只需大約半杯。

    Tomato Onion braised Pork Tongues

    Ingredients:
    Pork tongues - 2 frozen pork tongues
    (Put them in a pot of boiling water with ginger, Shaoxing wine, and green onion about 4 minutes to get rid of the impurities and pork smell. Rinse and drain well. Remove pork tongue skin, if any.)
    Herb, spice, and vegetable ingredients:
    Onion - ¾ (chopped)
    Shallots - 5 cloves
    Garlic - 5 cloves
    Bay leaves - 2
    Cinnamon stick - 1
    Star anise - 1
    Cloves - 4
    Tomato paste - 2 tsp
    Fresh tomato - 1 (chopped)
    Seasoning ingredients:
    Shaoxing wine - 2 tbsp
    Worcestershire sauce - ½ tsp
    Salt - ½ tsp
    Rock sugar - 2 small pieces (to tenderize meat)
    Light soya sauce - 2 tsp
    Water - enough to submerge all ingredients
    (Use less water, about ½ cup, if using pressure cooker.)
    Methods:
    1. Heat up wok, add oil. Add in onion pieces, shallots, garlics, and stir fry until fragrant.
    2. Add in bay leaves, cinnamon stick, star anise, cloves, tomato pieces, tomato paste, and stir fry until fragrant.
    3. Add in pork tongues.
    4. Add in Shaoxing wine, Worcestershire sauce, salt, rock sugar, light soya sauce, water, and bring it to a boil on HIGH heat then lower to LOW heat and cook for 45 minutes on stovetop.
    5. After 45 minutes, switch to HIGH heat to reduce the sauce. Add more light soya sauce if necessary.
    6. Discard all spices.
    7. Slice pork tongues, pour reduced sauce on top, garnish with herbs of your choice. Serve.

    剁椒魚頭
    材料如下👇
    📌大魚頭一個,洗淨切開兩邊可隨意切斷開與否(在魚頭近頸位置小小的界一刀會比較容易煮)
    📌剁椒4️⃣湯匙,(可以在南貨鋪買到, 將剁椒再剁細小小, 加入蒜蓉粒及姜粒撈勻)注意⚠️買回來的剁椒通常不夠辣可隨意加入適量的小紅紫天椒剁碎增加到自己喜歡的辣度(阿媽是加了4隻小紅辣椒和少量泡椒).
    📌姜粒2️⃣湯🥄
    📌蒜頭5️⃣粒
    📌蔥
    📌紹興酒一湯匙
    📌豆豉少許(洗淨)
    📌鹽
    📌豉油1/2 至 1 茶匙(視乎個人口味)
    📌紅指天椒4隻(隨意可以加入剁椒撈勻增加辣味)
    📌泡椒少量
    剁椒做法:#國外朋友如果買不到剁椒可自己做
    -預早一天將紅辣椒剁碎加入鹽, 蒜蓉粒及姜粒撈勻. 放入密封玻璃樽蓋好放雪櫃備用
    *如果不食辣可以用長身的紅椒*
    魚頭做法:
    1. 首先用姜、鹽和紹興酒醃個魚頭大約10-15分鐘(可去去腥味)
    2. 將兩對筷子分別在左右兩邊交义放在魚頭底部把它晾起在碟上。放1/2匙豉油在魚頭
    3. 加油入熱鑊爆香豆豉, 加入剁椒爆香. 另再加入蔥頭炒香
    4. 把炒香的剁椒(3)平均放在魚頭上
    5. 如用明火大火蒸12分鐘, 如用蒸爐需要15分
    6. 蒸完後, 灑上蔥花及燒熱適量食油把熟油淋上面, 完成!

    Steamed Fish Head with Chinese Salted Chopped Chilies (“Duo Jiao”)

    Ingredients:
    Fish head - 1
    (Butterfly cut in half, and make a slit below the gill on each side in order to cook more evenly.)
    (Marinate with ginger, Shaoxing wine, and salt for about 15 minutes. This will add flavor and get rid of the fishy smell. Add ½ - 1 tsp of light soya sauce right before steaming.)
    Chili sauce ingredients:
    Chinese salted chopped chilies (“Duo Jiao”) - one jar
    (Chop into fine pieces.)(You can make your own “Duo Jiao” by mincing fresh red chili, ginger and garlic, mix with salt, and store in a glass jar in the refrigerator for 24 hours.)
    Chinese salted chopped chilies (“Duo Jiao”) liquid - save the liquid from the jar (Optional to add into the sauce.)
    Bird’s eye chilies - 4
    (Chop into fine pieces. Omit this if you do not want it too spicy.)
    Chinese pickled green peppers (“Pao Jiao”) - 4 - 5
    (chop into fine pieces. Omit this if you do not want it too spicy.)
    Minced garlic - ½ cup
    Minced ginger - ¼ cup
    Fermented black beans - 1 tbsp (wash and rinse well)
    Green onion - ¼ cup (White part only. Chop into fine pieces.)
    (Store excess chili sauce in glass jar for other uses such as in stir fry dishes, lo mein noodles, etc.)
    (Avoid using food processor to chop these ingredients because texture will be different.)
    (For non-spicy version, replace all red chilies/green peppers with red sweet bell peppers and the rest of the ingredients remain the same.)
    Garnish ingredients:
    Green onion - green part only (chopped)
    Hot oil
    Methods:
    1. Heat up a wok, add oil. Add in fermented black bean and stir until fragrant.
    2. Add in Chinese salted chopped chilies (“Duo Jiao”), Bird’s eye chilies, Chinese pickled green peppers (“Pao Jiao”), minced garlic, minced ginger, green onion (white part only), and stir fry until fragrant. This is the chili sauce.
    3. In a steam-proof plate, scatter some chopsticks on the plate to let the fish head cook evenly, place the fish head on top, and add the chili sauce on top and cover the fish head.
    4. Steam for 12 minutes on stove top or 15 minutes if using steam oven.
    5. Once steamed, remove the chopsticks, sprinkle chopped green onion on top, and drizzle with hot oil. Serve.

    材料:西米 70g
    椰奶 100g
    牛奶 400g
    花奶 80g
    吉士粉 30g
    牛油 20g
    糖120g
    蛋2隻
    做法: 1 先將一半牛奶,吉士粉拌勻加蛋打勻再放一半椰奶攪勻備用
    2 將餘下一半牛奶,糖,花奶,牛油放煲內,開慢火煮不斷攪拌至糖全溶
    3 西米放滾水內煲10分鐘 焗15分鐘後隔篩待用
    4 將1備用蛋漿略攪拌遂少加入2煲內,一邊加一邊攪,要細火,不要大滾防燶底,煮至稍杰身加入西米及另一半椰奶,開大小小火,不斷攪煮至杰身
    5 煮好後倒入布甸杯中,放焗盆上
    (焗盆要加水)
    6 預熱焗爐,爐溫200度,焗20分鐘
    備註: 可放不同材料,例: 豆沙,蓮蓉,芋蓉
    西米如預先浸過,只需煲幾分鐘

    Baked Tapioca Pudding

    Ingredients:
    Tapioca pearls - 70g
    (Wash and soak tapioca pearls. Bring a pot of water to a boil, add in tapioca pearls and cook for 10 minutes with the lid on, turn off heat and let it cook for further 15 minutes with the lid on and without heat. After 15 minutes, drain well immediately.)
    Coconut milk - 100g (Split into 50g and 50g.)
    (You can replace with milk if you do not like coconut milk)
    Milk - 400g (Split into 200g and 200g.)
    Evaporated milk - 80g
    Custard powder - 30g
    Butter - 20g or 1 tbsp
    Eggs - 2 whole eggs
    White sugar - 120g or adjust to your taste
    Filling options:
    Red bean paste
    Taro paste
    Lotus paste
    Methods:
    1. In a mixing bowl, add in 200g milk, 50g coconut milk, 30g custard powder, and mix until custard powder has dissolved. Add in 2 whole eggs and mix well. Set aside. This is the custard powder mixture.
    2. In a cooking pot, add in the remaining 200g of milk, 120g sugar, 80g evaporated milk, 20g butter, and turn on LOW heat and keep stirring with a whisk until the butter has melted.
    3. Add in 1/4 of the custard powder mixture at a time from Step 1 and mix well. Make sure the temperature is not too hot or you will cook the eggs.
    4. Keep stirring with a whisk and continue adding the remaining 3/4 of the custard powder mixture. The mixture will slowly thicken.
    5. Add in the cooked tapioca pearls and mix well.
    6. Add in the remaining 50g coconut milk and mix well.
    7. Pour into ceramic custard cups. Optional to add in fillings of your choice.
    8. Put the ceramic custard cups in a tray of hot water.
    9. Bake in the oven at 200C (392F) for about 20 minutes or until golden brown.

    错,煮西米不用洗,不用 浸,西米煮好焗到透明後要过冷水,不过冷河的西米会糊糊的不好吃
