I didn't cover my beets and chard. They took a beating, but are recovering fine, as I expected they would. I've had chard survive single digit temperatures. A few of my cauliflower plants have freeze burn on the outer leaves, but the inner leaves and heads are doing great, and the heads are growing. The rest of the cauliflower and broccoli are unfazed. I am hoping for a harvest in time for Christmas dinner. Three more weeks, and it is seed sowing time for seed starts, and the cycle is complete for year-round gardening. Yeah! My hens started laying eggs. Yeah. Goldie and Bella started laying at the same time, mostly laying eggs daily. Ariel laid her first egg yesterday. Trixie is stubbornly not laying, but peer pressure from her sisters will get her going. I foresee not having to buy eggs in my future, at least not as many. I have plans, actually, I need to order them, to build a chicken coop and run, and add more hens to my flock, between 6-8. It will be more eggs than I eat, but that's okay. I can eat more.
I kept my insect netting on and put the frost cloth over it. I clipped it closed on all sides and my lettuces and brassicas came right thru the frosty nights here in the NC Piedmont. My husband raised the raised beds to 2’ high this year. The additional compost made a big difference in the health of the plants. I experimented with adding Azomite as well to these beds this year and I believe it greatly improved the health of the plants.
I live in Florida, but it got down to 28°F for a bit and then several mornings in a row of 32. I lost a pumpkin but everything else is still alive. I had containers of hot water that I placed around my tropical plants, and I think that helped.
My carrots disappeared a month ago, not sure what happened but the greens are gone. The radishes, are just kind of stalled. The bulbs aren't developing. The cabbage and bok choy got hit hard by slugs early on but have somewhat recovered. Broccoli somehow avoided the slug damage but may have gotten a little bit of damage from another pest. My one 5 gallon bucket of potatoes is doing fine. Which is shocking. Celery is doing amazing. Some of my pepper plants (in the greenhouse) are still hanging on with peppers turning red finally. Lol. Boy are Red Chilies hot fresh instead of dried out. Lol

We have a lot of deer in our area, I have found that the lighter frost coverings help as much with preventing damage from them as well as from frost.

its amazing how hot peppers can be when you grow them
I live in Conway SC, so pretty close to you. Heard some rumors that we might get another cold snap and maybe snow around Christmas
i heard that to the snow seems to be off the table for me.
