Westvleteren yeast is extreme, they use the same yeast as Westmalle but open fermentation at greater temps. Every beer I have made with it (wyeast 3787) I have left loads of headspace in the fermenter and still needed a blow off tube attached until fermentation ended, but the beers turned out great.
I have a pretty similar quad recipe. The other things Ill use is a bit of 20L Munich malt and a small (very) bit of coffee malt. For fun, try some cherry juice in a future recipe too. That goes really well with the plum and dark fruit flavors of D-180 Candi syrup.
Really curious how this turns put, i am from belgium and a westvleteren 12 is one of the best beers in my opinion and a hard one to nail 100%... looking forward to the follow up video🍻🍻

When did you do the last gravity reading, before or after adding sugersolution for carbonation? If after, wouldnt this explain the higher reading?

Interesting. I use Premiere Pro and make sure my volume never reaches higher than a certain level. I will have to investigate more!
