  • Bangalore's most popular "Shivaji military hotel donne-style" mutton biryani is cooked on dum and flavored with stock,chunks of meat and spices.
    We have tried to replicate the recipe as close as possible, hope everyone will enjoy. Let's have a look at the ingredients.
    INGREDIENTS:
    Mutton- 1 kg
    Bullet Rice- 1 kg
    Oil- 2.5 cup
    Ginger- 2 inch
    Garlic- 25 cloves
    Coriander Leaves- 3/4th bunch
    Pudina- 3/4th bunch
    Green Chillies- 15
    Star Anise- 3
    Cinnamon- 2 inch
    Javitri- 2
    Cardamom- 4
    Cloves- 6
    Black Cardamom- 2
    Bay leaves- 2
    Shajeera- 1.5 tbsp
    Pepper powder- 1 tbsp
    Chilli Powder- 3 tsp
    Fennel Seeds- 2 tbsp
    Jeera- 1.5 tbsp
    Turmeric-1.5 tsp
    Coriander Powder- 1.5 tbsp
    Ghee- 1 tbsp
    Salt to taste
    Masala needs to be added according to taste and we can store excess Masala in the freezer upto 1 week and use it for chicken fry or ghee rice.

    I really liked the method you used, you cooked all the raw ingredients and then you blended it into a paste. Most of the people use raw ginger, garlic and onion it gives the dish a weird aftertaste. But cooking it beforehand was a really nice method. But for marination you should not add oil because it slows down the marination process, instead you could've have used lemon or curd. Amazing recipe none the less. Kudos to you man!!! Great job!

    Please share some light on tenderising chicken or mutton as pieces will become hard after Biryani is cooked!!!

      Keep raw papaya paste in freezer and mix a table spoon per kilo of mutton 30 minutes before cooking mix well.. this will give you very tender and juicy mutton.. when it comes to chicken just marinate with lime/curd for at least an hour before cooking..

    I tried this recipe tasted awesome,but I can't get rice non sticky,the rice is getting very big or fat

      Use bullet rice and the key to getting non sticky and perfectly cooked rice is adding less water and right amount of oil/fat content..
      Use 1.5 cups of water for 1 cup of rice

    How much onion? Not mentioned in list... Not clear at all

      Sorry, you can use 2 large or 3 medium onion for this biriyani
