Not to mention ensuring nsf, state, and local compliance. Sure for 3k you can get the shell: How much is shipping? Taxes? Once here what will you do with an empty trailer? Cooking appliance cost? More than 1 (i.e. fryer + griddle, gonna have a grill? Do you require a hood? Fridges or coolers? Cost? 4 compartment sink? Hot water? Storage? Prep surfaces? The number 1 failure of mobile food is failure to realise cost? A griddle can be 300-3000. Is it a commercial kitchen without 35 other pieces? You don't price a car by the cost tires....... and that's before you get into product and serving expenses.

My seaport (port of Buffalo, NY) requires all imported vehicles to have a letter of compliance with the DOT and EPA standards or proper labeling of these compliances. The EPA had told me that the manufacturer needs to send a sample truck on their own behalf to the US to make sure it conforms and to figure out what needs to be done to apply for certificates of conformity.
