      Forty Years in Training
Say this to the people of Israel: Yahweh, the God of your ancestors-the God of Abraham, the God of Isaac, and the God of Jacob-has sent me to you. This is my eternal name, my name to remember for all generations.
      -Exodus 3:15
Moses was stunned, to say the least. He thought he was done. He had been living in relative obscurity, thinking he would never do much again. After all, he hadn’t heard from God for forty years. But suddenly one day God was speaking to him from a burning bush.
What Moses didn’t realize was that God had been preparing him all that time. By watching a little flock of sheep, he was in training to lead a human flock, numbering over two million, to freedom.
So there he was, standing before a burning bush. Moses had spent a lot of time in the wilderness. He saw a lot of tumbleweeds. He watched bushes catch fire and burn out. But this one was different. It continued to burn yet did not dissipate.
Something ordinary was doing an extraordinary thing. In other words, God was doing something to get Moses’ attention. And then He spoke.
God told Moses that He had seen the suffering of His people, and He was appointing Moses to go to Pharaoh and take the Hebrews to freedom.
Moses was an older man by that time. He was seasoned. Wiser.
In effect God was saying to him, “Moses, look at that old bush. Do you see how it keeps burning? That is what I’m going to do with you. You will continue burning until My purpose is accomplished. Are you up for that?”
God told him, “Say this to the people of Israel: Yahweh, the God of your ancestors-the God of Abraham, the God of Isaac, and the God of Jacob-has sent me to you. This is my eternal name, my name to remember for all generations”
      (Exodus 3:15)
We tend to look at these men through rose-colored glasses. Abraham had his lapses of faith, as did Jacob. Yet God was saying, “I am the God of men who have failed. I am the God of ordinary people who have accomplished extraordinary things. There is hope for you. I’m not only the God of Abraham. I’m not only the God of Isaac and Jacob. I am the God of Moses.”
He was calling Moses and giving him a second chance. He had been seasoning Moses and getting him ready for what was ahead. Moses didn’t know when he woke up that day that his life would change forever. It came unexpectedly.
When something out of the ordinary happens in our lives, it may be the Lord trying to speak to us. When we have an unexpected change of plans, when something we weren’t preparing for happens, we think it’s the worst thing.
Maybe something like this has happened to you recently. There has been a change in your plans. You wonder what’s going on. Maybe the Lord is trying to get your attention.
It just might be the hand of God trying to say something or direct you in a certain way. And what may seem like a coincidence actually may be Providence. Disappointment is His appointment.

In older times, wine was more juicy and less fermented. So, it went well with foods. Modern-day wine is not the same and can ruin it. Instead, think of more spiced wine or cider you get in Christmas. You can make a modern-day equivalent by mixing grape juice, sugar and spice to regular wine, and use this mixture to flavor the food.
(I also love your mom's - "back in the day, there was also less wastage" - lmao). Excellent video. Subscribed to your channel.

To add to this comment. I would very very strongly avoid a strong full-bodied oak-aged wine that was aged for a long time. Something fresher would pair much better with dates and seeds. The oakiness of an aged wine would overpower the light seeds. I would also rather add honey since she is already drinking it with vinegar. Perhaps a light rose would be nice.

The other cooks are Romanian and say that back in the day, her grandmother was cooking some cakes on fire that tasted exactly like the Libum cakes. The taste is so similar that she got goosebumps after trying the Libum.
And the way she describes how her grandmother cooked them, it's exactly how people would cook in the past, in the countryside in Romania. That's a very traditional recipe and way of cooking that is almost gone now. Only our grandmothers know it today if they are still living.

I've learnt that when it comes to food, actually, they used to mix so many different types of ingredients and acidities (like you can perfectly see in this video), and in cases like big dinners/banquets people would actually suffer from this, feeling sick and even passing out, or worse, in some cases.

In the US, a lot of more traditional farmers/homesteaders make a drink called Switchel or Haymaker’s punch. It’s a mix of a small amount of apple cider vinegar, ginger, natural sweetener (mostly molasses or honey), a little natural salt mixed in a big glass of water. It’s an amazing drink to replenish electrolytes on a hot summer day. It’s also a digestivo. It goes back to the 1600s

Came here to mention this too. I've only used apple cider vinegar, but I could imagine the type of vinegar you use matters quite a bit--like how the different sorts of molasses matter a lot with old fashioned recipes.
I tried switchel myself following a Townsend's video of a historic 18th C. recipe, and I was genuinely surprised that it didn't taste vinegary at all. More like a light and refreshing cider, with a touch of spice. (Basically a "ye olde gatorade", not a coffee/energy drink substitute.)

Posca is really good, but you don't use a ton of vinegar. Mix one part grape juice and one part water, then just a splash of vinegar to make it taste a little bit tart. It's super refreshing on a hot day!

Wait, but pasta was made sinde the Etruscans, so, you literally have pasta to eat in ancient Rome forward. though.
And then you don't have pizza, but foccacia, which is pretty similar, in many ways, also invented by the Etruscans.
And then you can have lots of polenta. All that with a side of garum. Delicious!
I could live my whole life eating just that.
The Romans did added wine to some breakfast, but NEVER while it had milk, that was a mistake.
Your Posca needed more water and more honey. You added too much vinegar, if it tastes like vinegar, you just need to add more water and honey.
Never ate Pane Quadratum, I must try it!

I regularly drink something similar to Posca and I love it! I mix a lemon (or lime, orange, grapefruit, etc) flavored seltzer with apple cider vinegar and add honey, though the amount of apple cider vinegar is only about 3 tablespoons, and the seltzer is approximately12 fluid ounces. I just add honey based on however I am feeling in the day, more honey for more energy. It's like a knockoff kombucha and quite tasty.
Posca is not much different, just not seltzer and with red wine vinegar. The red wine vinegar (in smaller amounts) with honey and hot water sounds pretty tasty, especially with more honey.

The posca recipes I have there's - at the very least - three times more water than vinegar! No wonder it was horrible. 😅
Real slowly fermented garum isn't quite that bad either. It's more like Thai or Vietnamese fish sauce. "Colatura aclici di Cetara" sauce is one product close to ancient garum and it's absolutely delicious! I use it in the traditional garlic-chili-parsley spaghetti. They also make real garum in Spain but so far I haven't been able to aquire it.
