The shock my family had when I served tuna, tomato and pasta. LOL.. now it’s normal but I don’t like American meat sauce and they don’t like the Italian standard. Bolognese, Way too much bad spaghetti sauce as a kid.
Just a staggering Enlightening Pasta Compilation.....and I got my Chops at an Italian Country Club in the Early 80's. You make it Easy, Logical and so Tasty and these Pastas are an Accomplishment Every Italian Mama strives for! Bravo Chef! Bravo! n
My great aunt loved a restaurant's lasagna recipe so much she asked them for the recipe but they refused. So she ordered it every week and took half home and picked it apart to get the ingredients. She cooked it and every week she got another sample. It took her months to get it perfect. And she passed it down to us before she died but nobody yet has matched her taste.

My Nonna would smack you if you dared to fix your Aglio e Olio like that. 🤣😂🤣👵🏽 It's okay to do those steps up to a certain point, but once your garlic is toasted, you put fresh squeezed lemon juice in the pan, add the pasta with a tiny bit of the pasta water, mix it up and add the parsley and parmesano reggiano. *NEVER add plain water to a pasta dish. Always use the salty pasta water.*
I love Chef John but I would place the pasta into the garlic and olive oil pan and mix together instead of pouring the garlic oil over the pasta on a plate. My way helps coat the pasta better and move even.
My daughter is one of those "I dont like onion-lunetics", so I will defenetly serve the Genovese-sauce . . without having tasted it I know she will like it after all . . onion is the base of good cooking regardless of where in the world you cook :-) Thanks for summing up your good pasta dishes in one video !!
We made the ziti the other night. Oh. My. God. If that wasn't the best thing I have ever eaten, I don't know what was. Just amazing! Thank you, Chef John! Your recipes are always amazingly delicious and easy to make!
The Genovese is in my regular rotation. It's SO GOOD. But you have to get up EARLY to make it. It really does take that long for everything to break down and disintegrate.

Except for: 1. Pepper (of any type) 2. Mushrooms This is almost EXACTLY how I prepare my lasagna. The basics are from my Grandma Jenny, who emigrated from Naples in the 19th Century. Of course, I added (minor) accouterments of my own through the years, but the recipe and the process is essentially similar.

Chef John is basically my Foodie hero, but when I hear he doesn't like the smokey flavor of Bacon, I kind of have to stop and examine my whole existence. What doesn't taste better with good smoked Bacon.

Only my opinion but, whenever I use ricotta cheese I have to add a touch of nutmeg.

You take out the pasta about 2 minutes before it’s done & toss it in the pan with the sauce. Finish cooking & Todd in pan with sauce with low heat

I don't enjoy RAW ONIONS. Onions that have been cooked down over 8-to-10 hours? Those I could eat!
