Definitely do not agree about not adding lime juice to guacamole. It’s sole purpose is not to prevent the browning of the avocados. The acidity in the limes helps to elevate the flavors of all the components. But to each their own.
I agree with you. The acidity of the lime juice, and not much is needed, emulsifies the fat of the avocados so no oil is needed. I learned to make guacamole in Oaxaca. I also think onions overwhelm the flavor, but as you say, each has his own taste.
Growing up in Mexico city. My mama (grandma) had cafe de Hoya ready every morning 5am ready for papa (grandpa) as he left for work. The smell of cinnamon throughout the kitchen. I loved it.
Casey Metts cafe de olla is typically prepared with coffee, piloncillo (Mexican raw brown sugar), orange peels and stick cinnamon. All of it is steeped and strained. You can add dairy if you like.
