Randy you can also use Arm & Hammer Washing Soda. It's works Exactly Baking soda, but it does not introduce Salt which Baking soda does. It would not make much of a difference on a single ferment. But on a continuous ferment, like UJSSM additional doses of baking soda would introduce more and more salt. Yeasts do not like salt. You can find Washing Soda in the Laundry detergent isle at wallyworld or local grocery store. Tread lightly with those glass thumpers and open flame. One breaks you have a couple hand grenades that blow. "Shooting a thump" is fun. I've used corn, berries, rye bread, peppermint, fruit, vanilla beans, pumpkin and coffee. I load a hopper (16" stainless steel funnel 2" tri clamp) and dump using a 2" stainless ball valve. This way I can let Fores and Heads by, then shoot the thump with whatever I got and close it. Stops production for about 5 to 10 minutes depending of volume of shot. (My thump is same size as boiler 15.5 gal keg) Another advantage with a thump dump is. If flavor too strong from 1st jar Hearts cut. I can dump that jar back in the thumper a jar or two later to re-distill and mello the flavor. One recipe on my hit list is peppercorn vodka. Silverfox distilling (Canada) has a peppercorn vodka which has won multiple awards. Why Peppercorn vodka ??? For Bloody Mary's and Canadian "Ceasar's" - Clamato juice instead of tomato juice. Another recipe I want to try is Thai Basil and Jalapenos for a vodka mixer. Cheers Buddy!

I’ve made apple pie before and left it to sit through the winter in my shed then carefully draw off the clear liquid, apple juice colored, and great product after the sediment if removed. Cheers

Does the tower of the pot have any material inside it ( glass marbles, ceramic tubes, etc.)? Liked the cork safety plug feature. My keg reflux (MUSTANG) still has a thermometer at its head before vapor goes to double thumper quart jars. From the condenser the distillate deposits into a parrot (for hydrometer) before passing through a 3 foot activated charcoal tower to the collection container. Pretty sharp bite (hot) at the parrot discharge but butter smooth out of the charcoal tower. Heated with dual electric elements controled via 30 amp varistat.

Living in Australia, we follow you, with some Excellent Advice & knowledge,, Could u please tell me what that instrument is, that u are using for abv & gravity readings ,?? as it seems easier and more prescise than ur average PH / Hydrometer , etc .. Also,, it seems like ur only doing 1 Distil, ? No stripping run / No cuts ( Except isolating Fore// Heads , At the start, ..... So is that all thats req, when doing this kinda run ? Ive never used/ nor had any experience with using Thumpers, But ive seen plenty of videos, such as urs, to make me now wanna find somewhere i can buy a set up such as u have there, to try to do some Awesome infusions, Much better than ive Ever accomplished in the past ... Great question refractometers they come in many forms the two I use are 1 specific gravity works great but only before fermentation i still keep a glass one for post fermentation and to calibrate the 2nd is for ABV % is works good but is you have sugar in liquid will mess with it you can get on amazon as far as runs i mainly do a one and done i have found if i check abv at the spout and stop collation at 40 abv hope this helps cheers

The blue/raspberry flavor is what I’m shooting for but I’ll probably start with just a sugar wash. Of course my daughter just talked me into ordering 3 lbs of frozen raspberries and 3 lbs of frozen blueberries and 25 lbs of sugar. I hope to not need the whole 25 lbs of sugar but I may use some for a sugar run before trying to form a recipe. Can you offer me any tips? I’ve seen folks use frozen peaches for a peach shine, and I think that is the process that I will use. Again if you have any input, it’ll be appreciated. Keep on keepin on.
Hey Dave make a sugar shine first use it to clean your new still plus that will help you get used to how it runs as far as frozen fruit it is the best because freezing helps break the cell walls sugar you will use around 2-3 # per gallon of mash
