Probably the first thing to consider in planning an appliance garage is "what appliances do you want to store in there"? I would consider that a toaster and a blender are the only two practical choices because they can both be used every day but can create a bit of mess (crumbs, lids and blades for the blender, etc). A coffee station gets used too much to be shut away in a cabinet and most people want to show off their expensive coffee machines and a crock pot or slow cooker is too big to fit in most appliance garages without taking up all the space. If you do have an appliance garage, make sure you put an outlet in the back for the appliances!
Couldn't you, for the appliance garage, not use the bottom piece of the cabinet so the appliances don't have to slide down/over it and reinforce at the back of the cabinet? Maybe 2 pieces to reinforce across the back bottom and another at the back top. To be extra safe you could run a piece across the top front. These could all be made with the existing cabinet bottom or wood painted white.
Wait wait wait -- what was that toe kick drawer at the end of your discussion on toe kicks? Is there a video of this customization? I heard a very funny supply chain story from an IKEA employee: I was complaining about the lack of cheese and they explained a distribution center was closed, a subcontractor was hired. That company transported it frozen instead of refrigerated, destroying over $2M of cheese in the first shipment alone. I can't imagine what the impact has been on sales...glad they are fixing their issues!
