- Whether you call it stuffing or dressing, thanksgiving stuffing is essentially a savory bread pudding. Once you understand the ratios between bread, liquid, binder and other flavorings, you can make any variety of stuffing you’d like. I hope this one is helpful! 🤘🏻Adam
The Stuffing Formula by weight...
100% Bread
100% Liquid
20% Eggs
*Additional flavorings

Classic Bread Stuffing…
1 stick Unsalted Butter
4 tbsp Chicken Fat *optional, sub out for another 1/ 2 stick of butter
1 lb Bread of choice (454g)
2 cups Cold Turkey or Chicken Stock (454g)
1 large Onion, diced
5 stalks Celery, diced
5 cloves Garlic, minced
1 tbsp fresh Thyme
1 tbsp fresh Rosemary
2 tbsp fresh Sage
2 whole large Eggs, whisked (110g) *round to the nearest egg

I make stuffing all year for roast chicken dinners so I'm making this for Sunday dinner. I'll add our traditional apple my Mother always put in the family stuffing that all her kids make now. I go rogue. Thx
I am making a Thanksgiving for Spanish friends here in Spain and a few are let's say very particular about the onion and celery chunks that would normally be in the finished product. Is it ok and still going to taste close enough to the real thing if while cooking the veggies, I then add the stock and then drain it all together into the bowl of bread?
Another idea, you could try grating the celery and onion so it’s practically undetectable? I’ve seen people do that with meat sauces before. Good luck ☺️

My amazing psychic powers, which don't exist, predict your turkey video will be at some time in the next week. :) As for the stuffing, this born and bred New Englander salutes you for going the bread pudding route! A lot of people make cornbread stuffing but I definitely prefer the classic Puritan and Olde English style stuffing.

Just the kind of recipe I was looking for -- thanks! My modification will be a little less butter and the addition of sauteed shiitake mushrooms, diced rather small. I'll decide how big the recipe will be by how much bread is thawed out in the morning. For the past 6 months I've been freezing homemade sourdough when there is still some left and before it gets moldy or stale. So looking forward to this!

Wondering if you've ever used smoked turkey wings to chopa and add to stuffing? I usually add giblets but I'm making just stuffing this year I could only find smoked turkey wings you think it would be OK or too much flavor from the smoke just thought I'd ask?
