lady Levinson actually saved the day hahaha, when I first watched this I really hoped that she will appear again in later episodes, sadly that does not happen, but this ep is gold.
The buffet came from the French dining style where the food was put onto the same table and you would help yourself from it - I guess our American friends adopted it from the French. The English dining style had their food served by a waiter where they would hold out a platter and the guest would pick from it (like you see on Downton Abbey). You actually see Russian dining styles these days in fancy restaurants where they service you one dish after the other.
Actually its more Swedish despite the French word 'buffet' and was known in the early 20th century as a smorgasbord. It has already spread in popularity by the end of the 19th century and the truth is, the Downton folks would have already known about it as it was already practiced in the Victorian era . It's a bit of a stretch to make it seem like Martha was revolutionizing food presentation but it did make her the hero of the evening. In fact the party for Rose's coming out in London had the same buffet style.
