Everyone does bolognese differently. I like mixed herbs or Italian herbs in mine and a drop of olive oil in the spaghetti stops it sticking. Big fail though, never eat it on the same day you make it!!!! Day or two in the fridge and then reheat when you're making the pasta. Now that takes it to another level. Once done you'll never eat on the same day again and makes for a quick midweek dinner. 😉👍

Lee, I don't know what those onions were but they were certainly not chopped lol. I am a big fan of the paper plates, use them all the time. Hygienic too, your counter top does not end up having a big mess on it. And yes to the sugar it cuts the acid in the tomato. A little bit of olive oil in the water stops the pasta from sticking together. That looked lovely Chef Lee.

I don’t normally make these comments but I can’t stop myself! I understand if you don’t want to use fresh garlic but a frozen from fresh cube (in the Asian bit of the freezer section of big supermarkets) will be nicer than the tube stuff, it’s a bit watery so pop it in with your onion before you caramelise, also butter instead of clover, if you don’t normally use it, it will keep for six months in the fridge or chop into cubes, freeze and use straight from frozen. Also if you want to reduce the effects of the spaghetti on your blood sugar (I have a lot of type 1 diabetes knowledge) cook it the day before and reheat, but I don’t think you will! Love the videos, I watch a lot of recipe videos and this was very well made and explained, keep them coming.

Next time instead of sugar try curry powder about the same amount. Curry powder pulls the acidic peaks down and balance out the flavours. Works with most acidic things. You will not taste the curry at all with that small amount. Looks good tho
