why can you not play the low e open as the high e

Try it! It sounds mushy and odd because of the minor 6 between the E and A string. If there is a strong bass line then you can get away with it as a passing chord.

Never thought about Cmaj chord spreading across 3 frets and the rest (mostly) just 2. And, for what its worth, I teach golf the same way. Meaning, imaginary lines in the sky are better than nothing...but if you can't feel it, your brain can't learn and repeat it. And yes, the thumb cam is a big plus because that's the way we see it. Thanks Ricky, you're a good dude.
