    One small recommendation, when you freeze fruits for the sorbet, use a parchment paper on the tray. It makes it easy to remove the frozen fruits from the tray.

      Also use a warm spoon heated under hot water or the thermally conductive ice cream scoop he was using

    Frozen banana, frozen mango, frozen greek yogurt and a little bit of mik blended will make an awesome softserve sorbet type treat.

    My mum used to cut mangoes into long strips, freeze them, and then run them through a juicer. This aerated the mango turning it into a sorbet. It works well with pineapple.

    Instead of syrup you can use a good honey, a bit of agave nectar and a little extra sugar. Honey makes it not Vegan but similar results! Try it with any fruits for the most part.

    Adding a tiny bit of booze like pineapple liqueur adds extra flavour and helps give the sorbet a more creamy texture by preventing ice crystal formation

    I already have a humongous pineapple that I cut up and froze recently
    (I used freezer bags on a tray 😉)

      Probably. If the texture of the sorbet is wrong you might just want to dissolve the honey in a little water so it resembles the same texture as maple syrup. But if thoroughly combined I can't imagine it makes a huge difference.

    So this is great, I did almost the same but substitute honey for the maplr syrup and freeze twice and re-blitz the sorbet inbetween freezes to really smoothen it up. The blender really does wonders once the fruit is deeply frozen...also is better if you select less juicy fruits like apples or pears. The lemon juice is VERY important of you just get ice!!!

    Live in Europe where a perfectly ripe and tasty pineapple is hard to come by? Make a ROASTED pineapple sorbet. Simply cut off the leaves and roast your whole, skin on pineapple in your oven. Let it cool down, then make your sorbet as you normally would (you might wanna put a little less maple syrup though).

    Hi andy. I have been a fan ever since i come across your video. I think you should make durian ice cream. Durian seems to get a bad rep with people outside of asia, but i think durian ice cream is the perfect entry point for introducing durian. It doesn't smell with all the flavour

    Is maplesyrup a must ingredian? Cuz in our homeland , the pineapple is flavour by motherland with sweetness. Just a bite of it will burst a mouthful of sweet.

    I've made this and the watermelon one but both freeze up HARD. Did you leave yours out for a bit so it's easier to scoop? It looks much more soft.

      @@namtruong8003 yes you do need to sometimes add a little bit of liquid like another juice or something to help it blend together. I use light lemonade sometimes for that
