  • 3 One Pot Rice Dinners for Busy Weeknights!
    Beef Taco Rice
    250g ground beef
    1 small onion
    ½ red pepper
    ½ cup corn
    1 tsp garlic powder
    1 Tbsp cajun seasoning
    1 tsp salt
    1 tsp ground cumin
    ½ cup crushed tomatoes
    ½ cup white rice (rinsed)
    1 cup stock or water
    Fresh cilantro and avocado to garnish
    Balkan Rice
    2 chicken thighs (boneless skinless)
    2 small onions
    1 bell pepper (red, orange, or yellow)
    1 tsp dried summer savoury
    1 tsp salt
    1 Tbsp tomato paste
    2 cloves garlic
    ½ cup white rice (rinsed)
    1 cup stock (chicken stock is best)
    Fresh parsley to garnish
    Thai-inspired Rice
    1 small onion
    ½ tsp salt
    ¼ red pepper (or a hot chilli if you prefer)
    1/8 pineapple, cut into small cubes
    ½ block smoked tofu (I've also made this with 250g ground pork)
    1 clove of garlic (a big one)
    ½ cup white rice (rinsed)
    1 cup water
    2 Tbsp fish sauce
    1 Tbsp sugar
    Juice and zest of 1 lime
    Fresh cilantro and sliced red onion or shallots to finish
    Top with roasted peanuts or cashews

    My cooking style is simple but flavourful. I cook with a lot of veggies but I'm not vegetarian. For me, a typical dinner is plant-forward, budget-friendly, non-fussy, and really delicious. As a step-mom, I make a lot of family-friendly comfort food, as well as a lot of simple, realistic dinners for one (or two).

    I've been making rice and throwing different things on top. This does eliminate a step and a pot. Gonna have to give it a try🥰

    Jeez I was fiddling with this one till the bitter end! The HD version hasn't even finished processing yet. Hopefully the quality goes up for ya soon! (Let's just say, the cooking part is the easiest part of making these videos!)

    Do you have a Korean version with kimchi? That would be really good in the lettuce leaves!

      Ooh that would be good! Kimchi, green onion, a splash of sesame oil, onion, garlic? Maybe chicken thighs or tofu for protein?

    These all look great but the last one is really ticking all the boxes for me! The peanut must add such a good crunch and textural component. I bet this would be great with some spring roll wrappers and a little peanut dipping sauce. Stop it!!!! I'm going to have to try this one soon. Thanks for sharing with us ❤️
