Ingredients for 8 pieces:
For the baking sheet (30 x 40 cm)
baking paper
For the yeast dough:
300 g wheat flour type 550 (2½ cups)
1 tsp salt
15 g fresh yeast (½ ounce)
1 tsp sugar
50 ml milk (3 tbsp + 1 tsp)
1 egg (size M)
50 g butter at room temperature (1¾ ounce)
100 ml water (⅓ cup + 1 tbsp)
1 tbsp sesame seeds, peeled
For painting:
1 egg (size M)
1 tbsp cream
Bake:
Top/bottom heat: about 180 °C / 356 °F 25 minutes
Convection: about 160°C / 320°F for 25 minutes

This recipe brings back happy memories of a restaurant I knew of when I was a child. They served just hamburgers, and used these buns that are in your recipe. The meat was cooked over an oak fire, and the inside of the buns were also toasted on this fire. I have never had a hamburger since then that was as good as these. That restaurant is no longer in business, as the owners retired, and have since died. All of my family members old enough to remember this restaurant, speak fondly of it as the only place to get a good hamburger.

The best hamburger comes from my grill 😊 Liberally seasoned with house seasoning (1 cup salt, 1/4 cup fresh pepper, 1/4 cup garlic powder, a bit of onion powder), and cooked perfectly over charcoal or wood.

The best hamburgers? At my house, of course! 😊 I call them my weird hamburgers. They are inspired by The Old College Inn, which, unfortunately isn't any more. (BTW they had the best metwurst and beans!) I use a slice of sourdough for the bun, a 1/3 lb burger, thick slice onion, plenty of cheddar cheese, and mayo. Simple and delicious. You have to unhinge your jaw to get a bite, though.😄

Can I use instant yeast?

I make a vegan garbanzo burger topped with just about anything and these buns would be perfect
No egg wash on top though, right? I'd be made golden with a different technique, I imagine.
@@HelgaCavoli I have never found that perfect substitute for a real egg wash. But I have come close with a water/agave mix on a smooth, soft crusted roll in the past. I will try this with your recipe. Cheers :)
