Caribbean Style CORN ON THE COB in coconut milk

    Caribbean style corn on the cob is boil in coconut milk and season with fresh herbs and spices
    Recipe
    4 cups Coconut milk
    2 cups water
    5 Fresh corn on the cob
    4 sprig thyme
    2 scallion (green onion)
    1 scotch pepper (optional)
    1/2 onion
    3 cloves garlic
    1 tbsp pimento berries (allspice)
    1 tsp salt or to taste
    Boil until half the liquid has been absorbed by the corns to create flavourful corns. Around 30 to 40 minutes on medium heat.
