      @Jefferson Mason I don't believe it's the chitterlins that is the problem, because I just about guarantee you that most Black people eat chitterlins maybe one or two times in a year. That's most Black people. It is too much work and is generally eaten as a treat for some holiday and maybe one other time during the year. So calm yourself down. It just might be that good old red meat called steak that is to blame. Or, just plain old overeating. And heaven forbid you eat all those pies, cakes, cookies and other desserts that you don't complain about. And spaghetti, rice, and potatoes. They are all killing us off, but I'll bet you see no problem with those things that have half the population being diabetic. Right? FOOD FOR THOUGHT!!! So, what do you eat?

    • @norisknorise9592
      @norisknorise9592 4 роки тому +4

      Jefferson Mason Facts man , it’s not about race to me , it’s just the fact on the history behind them , I haven’t tasted them but I think it’s fucking disgusting but If some think it’s good then oh well ; but trust me they can’t be that damn good , it’s like eating straight up nastiness , the only reason I’m not a vegetarian yet is because I love beef , I don’t eat pork and I only eat white meat chicken , but deep down none of this meat is good for you , but at least Burgers, Steaks , and Chicken is good asf

    • @jenniferabraham9508
      @jenniferabraham9508 4 роки тому +3

      @Jefferson Mason In your original comment, you were speaking about chitterlins and stated this food is literally cancer. You are wrong about potatoes. They are very bad in and of themselves. They are full of starch and high in carbohydrates. Corn is also not good along with the rest of the things I mentioned in my previous response.

    • @jenniferabraham9508
      @jenniferabraham9508 4 роки тому +2

      @Jefferson Mason if you are not about to go back and forth with me, then why did you respond? I've known that corn is especially bad for Black people because we don't digest it well. Now, believe me, I love corn and everything else that I named, but I don't eat them anymore. I'm not putting anyone down who does, as I'm just plain old jealous of those who can. And you're absolutely right about everything in moderation. So, this should end our battle over what one should or could eat. You eat the corn and I will eat the chitterlins! I don't cook them and rarely have the occasion to eat them, but when I do, I'm smiling! Lol! Have a very Happy Thanksgiving!

    Food safety at its finest. This lady was very clean and thorough. I am 34 years old and tried a piece of chitlin for the first time at a Thanksgiving dinner I was invited to this year. It wasn't bad, I thought it would be terrible. The 80 year old woman who cooked them was also very clean and precise. And the only reason I attempted it, other than the fact that the preparer was clean, was because this dish was something that at some point in time kept my ancestors alive. I wanted to connect. I fell into the hype of people down-talking this dish because it is pig's intestines, but these same people eat sausage (which is meat stuffed into an intestine), tripe, stomach or a variety of any other food which is considered unclean/un-natural by someone. (Including processed, gmo, fast food, etc.) On top of that, I'm pretty sure my ancestors didn't get their pigs (or chicken, beef and fish) from feed lots where animals were fed unnatural diets... which means they had a better quality animal/product. Anyhoo, once that little piece was on my plate I thought, "You only live once... so grow a pair and try it." Glad I did. Well, my testimony is over... great video. Blessings to all. ❤

I'm Filipino, this is similar to a dish called sisig but sisig has liver, pork belly and/or parts of the head too. My grandmother used to emphasize the importance of cleaning the "bituka"/chitterlings and she used only salt to clean them and she par boiled them too. I like the tip to use baking soda to clean and tenderize, and half a potato to help with the smell. Thank you for this video!!! Also, you have a great voice, I can tell that you are truly happy cooking this dish and sharing your recipe. I like to hum and sing when I cook too. Love Chittlings. I'm used to my dad just cooking them with onions salt and pepper. He would let them cook down until they were like gravy and serve over rice. Also, fried chittlings are good too. Dip them in pancake batter with lipton onion soup mix and fry in oil. Best things ever!

    You know what? I agree to some of the comments, some don't believe that pork intestines are being eaten and that they equate to slavery is just being racist to the highest level. What if I tell you that here in the Philippines, every part of a pig is being eaten and nothing goes to waste (EVEN BLOOD, INNARDS, REPRODUCTIVE SYSTEM, EVERY BODY PART EVEN THE EYES, ETC.).
    Her cooking is actually a more higher level of cooking pig intestines, looks classy and looks very delicious. Wait till you get here and eat our food (I do dare everyone).
    Maybe yes, it's due to survival but cooking food or eating food should not be disrespected in any way. You may not like it but it should not give you the right to equate it to racism.
    God bless you dear. Your voice is very soothing and you are so sweet. You cooked the chitterlings far from what I know based on filipino recipes here but I can tell it is really, really flavorful and hearty. God bless you always!!! 😊😊😊

    My mother also wants to tell you that you gave her tips that she didn’t even realize and she’s going to be cooking these for Christmas. Happy holidays Gina. 😺

    I LOVE cleaning chittlins! I usually clean 20-50 pounds when I decide to cook them. I clean them the way you do but with one exception...I add either apple cider vinegar or white vinegar to the soaking water and the bowl where the cleaned chittlins have been placed. I find that the vinegar helps to separate the unwanted membrane from the muscle layer.
    When chittlins are properly cleaned they don’t smell. If someone cooks them and they stink, so that you can smell them a block away, that tells you that they were not cleaned properly.
    Also, after cooking them, I separate the chittlins from the stock. The stock is placed in the freezer so that the fat can rise to the top. I remove the excess fat place the chittlins back in the “thinned” stock...and reheat!

    • @dbgoldbach9947
      @dbgoldbach9947 6 років тому +1

      C Ash what a great tip about the stock, thanks!

      C Ash how long do you leave the stock in the freezer

    • @minniethemouse62
      @minniethemouse62 5 років тому +1

      A P
      It really depends on how hot the stock is. Strain chittlins from stock, placing the stock in the freezer, strained chittlins in refrigerator. The fat will rise to the top and become solid. I cut the solid fat into sections, and carefully remove it. You will have a much leaner stock.
      The first time you do it, you will be shocked at just how much fat is in chttlins, I’m talking about 3-4 inches of solid fat. Nobody needs to eat that much fat.
