Appam Ingredients:
250 grams of rice flour
2 tbsp sugar
1/2 cup coconut, grated
2 cups Warm Water
Kappi Process
1 ladle above mixture
1/2 cup water
For Quick fermentation
1 tsp yeast
1 tsp sugar
1/2 cup warm water
1 tsp salt
Oil

About Appam
Appam (also known as Aappam) or āppa (Sinhala: ආප්ප) in Sri Lanka is a type of thin pancake originating from South India and Sri Lanka. It is made with fermented rice batter and coconut milk, traditionally cooked in an appachatti, a deep pan similar in shape to a wok. It is part of Kerala and Tamil cuisine found in the Indian states of Tamil Nadu and Kerala and Sri Lanka. He explains the exact science behind the appam , which is very eye opening and important to some o us , to understand why we do whatever we need to do. Our grandmas, mothers and fathers used to tell us "you need do it this way, not that way" but never the reason behind the action, so we understand further. But Varun Inamdar's explanation goes up and beyond, from the recipe to the tools we need to use. This is so important! and many chefs don't do this enuf.
I have seen so many Aapam recpies..no one has ever explained it se well .The so called Kerala recpies are also not so well explained.. technically. You are the best Varun .You are so sincere. God bless you!

Only just discovered you Varun. Love your authenticity and style. Esp the bit about the role of 'kappi' in the overnight method.... where I have memories of raw rice being soaked for hours and then ground before the toddy was added.
