From what I understand, that should be just fine as long as you don't let the soil dry out. I believe you would just water like any other house plant. If you leave it is standing water in a container it will probably rot. Please let me know how it does for you.

i left mine in the water all winter and its growing just fine
In China, eating raw lotus root is not recommended, because of the possibility of parasites.
