i have a load of students who blog about doing these mini projects and use them to demonstrate experience yeah. Just don't present the images or projects as 'YOURS' ... i've also have some people who've done that, and the interviewer was an ex student of mine - didn't end well.

nope. It's a mixture of things. Keynote, a macOS app called Graphic, and a lot of self-created and commercial art.
