Churned vanilla ice cream, tested thoroughly to find the best keto version just like normal, store brand vanilla ice cream.
I have figured out macros for the products I used, you can certainty swap out milks, and the extracts have different carb counts. I've used almond milk and cashew milk before and that would definitely lower the card count, also read up on many different alternatives which should work with just adding the gelatin.

1st Keto Recipe Test:
Cut original recipe down to 1/3 the recipe:
1 egg
10 oz. half and half
11 oz. heavy cream
1/4 cup granular monkfruit/erythritol blend
1/4 cup golden monkfruit/erythritol blend
1/3 tsp. salt
1 Tbs. vanilla
Heat half and half, heavy cream, sweeteners and salt until everything is melted and combined. Temper the egg slowly with the hot mixture. Pour threw sieve into a bowl placed over an ice bath and add vanilla. Refrigerate until mixture reached around 42 degrees about 2 hours. You can also skip the ice bath and cover with plastic wrap directly onto the ice cream base and refrigerate overnight. Freeze in an ice cream maker according to manufacturers directions. Once it is a soft serve consistency you can eat right away or put into freezer for a few hours, it will stay scoopable for several hours but it does freeze solid and needs to let sit out for 15 minutes to be scoopable the next day.
Can replace the half & half with a milk alternative like almond or macadamia to make it even lower carbs!!!

1 egg

1/2 tsp. unflavored gelatin

OK, rarely do I comment on videos but I just had to slide on in and say THANK YOU!! This is the ONLY recipe I've come across that actually does what it says it's going to do. I took some liberties (used just allulose and the monk fruit, added cocoa powder, forgot the salt, etc.), and it STILL came out amazing. The BEST part is the fact that it's scoopable days later. Man listen, that's a game-changer!! Your recipe is even pretty good on resources... 1 egg instead of 4 yolks and all that... I couldn't be happier. So, Thank you again! :-)

OMG! Fellow chef here and I have to SO THANK YOU for this recipe! I made the same recipe but made it dairy free using the cream out of the coconut milk (canned good quality) for the heavy cream and the rest was coconut milk! I didn’t add the two extra tablespoons of sweetener as we are a “less sweet is better” family…lol…but a day later and love it and scoops out with a regular spoon…Love this!

@@KetoUpgrade Before my Keto journey I was always joking with the waiters at restaurants because everything on the dessert menus are filled with sugar, dairy, or gluten and to top it off are low fat and was always wishing someone would make a high fat low sugar items!
Hi just saw this post of yours… I love dairy free and low sweet taste too! Been keto 6 yrs and sugar subs can cause tummy trouble and I hate the cooling effects of lots of sub sugars. Did you add the egg and gelatine into your recipe? And does it need Elulose or can Ethrytol work? Thanks
@@jdmosaics hi! Yes you need to almost follow the recipe if you want it to be scoopable the next day! I just added less sweetener and subbed the milk ingredients for coconut milk. I make all kinds in my ninja Creami however!
@@kyliefan7 thanks for your reply Matt, I find many of the Keto desert recipes are way too sweet for me. I cut the sweetness down by at least half. I think it is better to ween the like for sweet stuff right down after a while on Keto. Other wise when one falls off the wagon so to speak… it is so easy to go back to all those high sweet regular sugary foods. I try any SAD sweets now they taste dreadful after so many years without that excess sweetness. I actually believe artificial or sugar substitutes are not really good for humans. ❤

Girl this is delicious! Thank you! I made this ice cream last night using only allulose and the golden monkfruit (I did not have any xylitol) and it was a total success eventhough my ice machine is cheap and not that good! One whole day and it is still scoopable! 😍❤❤❤
who knew adding gelatin was the secret! That's why I don't make ice cream on Keto. It's too much to eat in one sitting and if I let it stay in the freezer, it's hard as a rock. Thanks, can't wait to try it!

Kristen Taylor, it's not the gelatin. It's actually the allulose.
"Besti" makes a sweetener with allulose and monk fruit combined. But even if you don't have this combination, having the allulose alone (no gelatin) will give the ice cream a smooth mouthfeel and scoopable right out of the freezer.

I started out on Keto using Truvia after about a year I found Xylitol & really liked it. I had already lost the weight I wanted & was "trying" maintenance which seemed hard. I'd gain than stall finally came across a video testing your glucose on Keto sweeteners. Xylitol was shooting mine up crazy high Ick :( I actually liked the cooling effect most people hate lol Had to drop it & the weight loss began again..
Yeah different sweeteners effect people differently. And everyone has their preferences. I don't use xylitol often, mostly monkfruit/erythritol, stevia and allulose.

No Xylitol! "Besti" now makes a sweetener with half Allulose and half Monk Fruit. It's the best for scoopable ice cream right out of the freezer. No need to buy separate sweeteners.
The allulose is what makes it scoopable. You don't need the gelatin for that. You could also use "tara gum" for a smooth mouthfeel and scoopable right out of the freezer. But the allulose is what actually does that. No need for gelatin.

I know you made this 2 years ago but given the latest findings on the dangers of Xylitol this year, can you suggest an alternative? I'd love to try the recipe.
I have better more recent ice cream recipes and it says Allulose OR xylitol.
Xylitol doesn't hurt cats or rabbits but is deadly for dogs

Great video! Can you use liquid allulose and more monkfruit if I dont want to use xylatol due to pets?
Thanks! I've never used liquid allulose but it should work. I would use more allulose than monkfruit to keep the ice cream soft after it's frozen for a day. I have many new ice cream recipes that I just use all allulose and just a little bit of monkfruit and they turn out great!

@@KetoUpgrade It doesn't work for everyone with seizures but I follow a mostly ketogenic and mct oil diet. A lot of people treated seizures with those diets in 1920ish. John Hopkins, the Charlie foundation and mathews friends are good sources for info.I'm allergic to most pharmaceuticals they use to treat seizures. High fat low carb and low to no sugar Diet has been a big help in my case. I did try the recipe with the liquid allulose and 2tbsp of monkfruit. It came out great! Very thick softserve consistency after freezing for a few hours. My husband said it tasted like regular ice cream.:) Thank you so much again for posting keto recipes! ❤

Xylitol is may favorite but I have a dog so….. I generally use 1 T stevia (now brand only-no aftertaste) per a 1/3 cup allulose to avoid erythritol cooling effect. Doesn’t matter for ice cream though. What proportion/mix would you suggest for those who can’t use the xylitol?
Allulose or xylitol is needed to keep the ice cream soft for weeks that's why it is better than the store bought keto ice creams. I use allulose with some monkfruit/erythritol so that it isn't too mushy even after frozen.

I've heard that you can put the chilled mixture into the freezer and stir it every 20 minutes, it would turn out decent but probably not as creamy as using an ice cream maker.
Also is there a way to make Green tea or Sesame keto ice cream! I love them ❤
Use matcha powder and extra sweetener. I will have a no churn match ice cream bar in the future but ice cream videos don't do well in winter.

@@jdmosaics well US and Canada are 80% of my subscribers actually. Australia is 2% And literally if I make a video that doesn't perform and doesn't go with the trending popular thing I lose a lot of revenue. Then also I won't get recommended by UA-cam to new viewers if I have poor performance on a video.

Have you tried this with coconut milk, I wonder if this needs the gelatine to help it stay scoop-able? I see people use Sweetened condensed milk (ketofied) and I am not sure to do that this the Coconut Milk.
I have tried with coconut milk and coconut cream, it's icy. I explained in the one ice cream video the gelatin is to give it a smoother mouth feel. The allulose or xylitol is what keeps it soft.

Wouldn't the liquid measurement be in fluid ounces and not by weight?
My scale has fluid ounces as a measurement on it so I just use that.
It sucks that allulose isn't freely available in the EU.

I normally use Bocha Sweet as my sweetener? Will that work?
I just got some, I have not experimented with it yet. I don't know how it act in ice cream, I have to do some testing, just crazy busy. With my research prior to this first video, I only found that xylitol and allulose keeps the ice cream soft.

What is Half and Half? I am not in US. Is there a substitute for it,.please?
It's a stupid thing we have here, it basically between heavy cream and whole milk. You can use anything to replace it. I have done many ice cream recipes since and to cut down on the carbs I use an unsweetened nut milk instead of the half and half and it's still delicious! And way less carbs😁.
