Looks fantastic. I'm Hungarian , born and raised in Budapest and I highly aprove of this and the bacon was an awesome touch. I'm just glad you didn't use any tomato sauce or paste. Some Hungarians use tomato sauce in their cabbage rolls, NOOOO ,that's just wrong lol. ! Lol. You did a perfect job even without rice. Oh and your pronunciation of töltőt káposzta was great too. Hehe
I agree with you about not adding tomato to the Hungarian cabbage rolls. Adding tomato is the Polish way of making cabbage rolls which are called Gołąbki. :)

I am from Transylvania and we usually use Sauerkraut... well we make the whole cabagge into sauerkraut (prepare a couple in a barrel for winter) so we use whole cabbage leaves to cook the meat with rice inside. 🤤 the sour cabbage leaves give it a really good taste. In some regions in Romania they use grapevine leaves to pack the stuffing into (most likely in other places as well)

That is the tradition here. And I think the origin of this meal is turkish. You did a good job with a grated sauerkraut! Looks very delicious :)

We the Serbs call it sarma, actually made some today, keto adapted of course. I always add some bay leaf, dried or fresh, gives it a spec. you-cannot-resist me smell.Give it a try :D

@@danakarloz5845 I made last night. Very excellent, except, next time I will make with beef/pork mix. I found the pork was a little dry. But it came out very delish. I chopped up baby bok choy instead of sauerkraut. Mixed with all the scrap cabbage, it was excellent.

FENNEL SEEDS ALSO TASTE REALLY NICE WITH PORK. I OFTEN RUB CRUSHED FENNEL, GARLIC, CRUSHED DRY RED CHILLI, SALT AND PEPPER ALL OVER ROAST PORK WITH SOME OIL AND LEMON JUICE. SLOW ROAST THE PORK. YUM.
My Russian Grandmother made these for me all the time when I was a kid, so did my mum as I grew up ... I still get her to make a batch and bring them over for me and my family from time to time. Our Russian version is either regular beef mince or veal and pork mince, fried with onion and garlic (yes we cook the mince first!), then mix in a cup of parboiled rice (about 3/4's cookedbut still firm). Then its wrapped in the blanched cabbage leaves and put in the pot. We always had a canned tomato soup and cream mixture poured over. Always been my second favourite food of all time (after Vareniki's ;) ) But on Keto I make them slightly differently - because the tomato soup is the carb killer, over 20g of carbs in one 410ml can! So now I make them very similar to the way you have done it in this video using a great very low carb stock, plus a splash of cream ;) One of the best, most wholesome, Keto meals I have ever made. Plus I can have leftovers for lunch for the next couple of days :) Awesome recipe! I'll give your version a crack next time :)
I’m Hungarian and grew up on these things. You left out a can of crushed tomatoes. Then you put sour cream on the very top above the sauerkraut, and cover for 15 minutes. Then it’s ready
If you've got time to spare, core the cabbage, pack it with salt, seal it in a container with water (sterilized first, of course) and let the cabbage sour. Not only will the leaves come right off, but cabbage rolls with soured cabbage is transcendental.
Your right its a lot of work my mom may she rest in peace always made it with rice but was a hit with everybody she had a special way of making it not to different from what you showed but now I'm kicking myself in the ass because I never got here recipe.

Throw the head of cabbage in the freezer for a few days and than thaw the cabbage and it is perfect to work with, I make cabbage rolls all the time and it is softer than boiling.
