I grew up in Bhutan and love all these dishes. Ema datshi is like the national dish but you can also try kewa datshi (potatoes& cheese) which has a different texture. All the dishes are best eaten with plain red rice on the side. Also one of the reasons some dishes are bland is because there’s always a side dish made of chilies, onions, garlic and cheese called ezay. It’s like a spicy condiment you can add to anything. The pork that you wanted to try is called Phaksha Paa, which has chunks of dried pork belly cooked with chilies.

I had a Bhutanese roommate years ago, and once I was down with flu , he made me kewa datsi. It was so comforting warm stew. I had even forgotten about the name, untill now.

So happy that Bhutan and Bhutanese dishes are finally gaining recognition, as they should! I had almost all of these dishes growing up there.
But it would have been even more awesome if you all would have tried the most important side dish, which is eazay (made with cherry tomatoes, red chillies, garlic, dried meat, local spices like thing-nye, etc). You guys should've tried Kewa and Shamu dhatsi too along with red rice.
(Kewa= potato, Shamu= mushroom)
Bhutanese dishes are till date my absolute comfort food.

I recently went to Mohinga The Taste Of Myanmar. The food was amazing must try.
I also tried LHA kitchen's Kothey Momos they were juicy and fresh as well.
Koka is delicious without any addition. Ur's must me cold or over cooked. Try hot Koka.
