"He'll grow" is the perfect line to showcase exactly who and what Professor Hulk is in the MCU; He's got essentially most of the smarts and humor of Bruce, but also most of the cruel and childish nature of the Hulk.
I think he was just purely agitated that things were not going as planned and everyone was getting after him to fix a problem he has almost no idea how to solve properly lol
