Why the zero gravity over winds of etaqua? Is it becuase if they blind pop a back row without summoning first you could activate it on response and at least and put your monsters in defense? Or is there another reason

You can gravity to change positions on your monsters, this protects from wide spread, walls and can switch monsters back to attack if they were switched to defense say by windstorm
