Chinese name is called 马蹄蛋，while the name means Water Chestnut Egg, doubt there is any water chestnut in it at all. If I remember correctly from a show on local TV... it has pork fats added to it.. with sugar and seasoning then steamed, then they cut it up before they finally deep fry.
