I used to be so confused with this too! I learned the reason she puts a mini-schwa on it is to show that there will be a vowel coming next. When kids make the /er/ sound, it is represented with the graphemes er, ir, or ur.

At 56:26 Dr. Kastner articulates the sound of r as 'ru' and my understanding is that it should be 'rrr' as in rat.
