  • Looking for a quick way to glamorize simple desserts? Well then, these piped chocolate doilies may very well be your answer! In this video, I show how to create lacy underliners for dressing up slices of cake, samplers of sweets, or whatever end-of-meal treat your heart desires! No complicated chocolate tempering required - just pipe and refrigerate.
IF YOU LIKE THIS VIDEO, please give it a thumbs up and subscribe to my channel. It is only through your support that I can afford to make more videos. THANK YOU!

    NOTES ON CHOCOLATE USED:
You could use most any chocolate for this project, even candy melts, though I prefer to use a premium couverture chocolate because its relatively high cocoa butter content gives it great flow-ability and mouth-feel. Brands I most often use are Callebaut, Valrhona, and Guittard. I avoid the usual store-bought brands like Nestle and Hershey's, as they don't flow as well and are more waxy due to non-cocoa butter fat substitutes.

I love watching your work. I'm a BPA student, and while we're exposed to each element a little bit I find that chocolate/confections and working with pastries are my preferred. So it's just so amazing to watch your videos, and so inspiring.

This is a fabulous idea...I would have never thought of it...I have been a baker and candy maker for almost 40 years and sell locally, farmers market , amazon and ebay. I have also been running a daycare for almost 40 years. I LOVE this idea and your video is great...Thank you SO much for sharing...We have a yearly ladies cooking day (family) ages from 3 to 68 and they usually have me do the desserts...I can not wait to do this for that occasion. Thanks again.

you've made this tremendously easy to do at home. I love the parchment bags, much easier for myself to use. mine came out amazing and guests loved them so much. I am so glad I found you. I've credited your doilies as I made the ones in this video. thanks so much again.

Last night I watched "how to make chocolate dollies" am very interested but do not know how to temper the choc. Do you have a vid on that? You hands are so steady! I will need to have steady hands and take care that those intricate lines do not get cut off.

Julia, thanks for sharing this beautiful technique here. When I was a teenager I learnt some basic cake making skills from a girlfriend, and for a while I was able to make good money from selling my creations between my teachers at highschool and later at the university I attended. Since then many years have passed, and I had never been so much motivated to get again into the kitchen as after seeing this video!

Dear Julia. I can't thank you enough for sharing your terrific, yet simple Chocolate Lace Doilie/Chocolate Lace Applique techniques. You are a very professional and generous woman. I tried both techniques and I did it!! They both came out wonderful and made my plated cheesecake and my 8" cake look spectacular and expensive! My family members were stunned. They really thought I purchased my deserts at a bakery. Your videos are super and so are you! Martha

Normally I find it annoying when people talk a while before showing how to bake/cook something in these videos, but I didn't mind it at all in this video. I don't know if it's how you talk or the story of why you would use the doilies or what, but I appreciated it. Thanks for showing this technique! :)
