Your selection of the country depends on your field of study.
If you are from an engineering background, Germany is much better, if you are into fashion or management then France is a good choice. For Czech, I am not aware of any specific domain.

The employer should give you "attestation de travail" which has details about salary, job role, etc.

Mostly yes, French is kinda mandatory. Even for IT jobs, companies expect you to speak atleast basic French! But if you are lucky, you'll land a job just with English
