Amazing recipe, the only one I use now. Many others don’t have a strong taste unlike this recipe. Only thing is, I reduce the ghee by 1/3 as I find when the Barfi sets, there is ghee sitting at the top. Other than that, top notch!

Here is the tip to overcome it.. ● It is all about the right measurement of milk powder and sugar.. ● Milk powder should be more than the sugar you are adding.. ● Always dissolve sugar first while you add liquid milk,then add milk powder.. ● cooked mixture should look matte and not shiny.. ● if you overcook the mixture, it will turn shiny, and burfi will be chewy. ● always use full fat milk powder or whole milk powder. ● never use tea whitener powder

I took the exact measurements you mentioned and still my milk evaporated so quick..... Yours was liquidy till so long mine became thick and lumpy within a few minutes.

I tried this recepie...starting of the process I got lumps...I cooked until no lumps texture...that's it..it overcooked ..it became chewy...milkybar toffee chocolate with nuts

I want my burfi to be firm (the way you made) and not like a fudge.. A lot of recipes are there online for the kesar one.. But one particular recipe I saw first she made a sugar syrup n then added milk power, saffron milk etc.. Is there a technique to this?

Recipe was osm, I tried but just be honest you forgot to add cardamon powder na? That's why you added it after it hold shape , you should have added it when the milk was boiling

I tried them with formula 1 milk powder.. they came out like toffee coloured sweets.. the taste was similar to Caramel!

In all such cases, you overcooked the mixture. Cook until you can see the ghee around the mixture and turn off the heat
