A headcanon of mine is that Atsushi's ability has some sort of conscious of it's own, like if it feels like the owner(Atsushi) is in danger it will act on it's own to survive and such. (ex. attacking Shibusawa, eating himself/other people).
I actually saw a video of a HC similar to that where they said that they believed Atsushi could loose his humanity to his ability but I don't remember all the details but it was really interesting-
