I generally food process prep my seasoning as one batch: onion, garlic, and bell peppers mainly. I don't add celery unless it's a special occasion. I bag them up in batches. I pull them out when I get ready to make a stew like meal (e.g. chili, casserole or soup).
You can also add any type of oil into the minced garlic make sure you cover a good amount of oil and keep it in a glass jar and keep in the fridge and use it as needed when you cook daily. If you are not use garlic often than you can use the ice tray freeze it first and some half of the cube or full depending on your needs. After they are frozen put them in a container in the freezer and use as needed. Hopefully it’s work for you. I using a lot of garlic in my cooking daily so I like to oil and refrigerated.
