Bacon, Gouda & Garlic Mashed Potatoes

Ingredients:
3 garlic heads
2 teaspoons Stater Bros.® Classic Olive Oil
6 slices thick-cut bacon, chopped
3 pounds Yukon Gold potatoes, peeled and quartered
1/2 cup Stater Bros.® Unsalted Butter (1 stick)
1/3 cup heavy cream, warmed
1 cup shredded Gouda cheese
1 1/2 teaspoons ground white pepper
Sliced fresh chives for garnish (optional)
Directions:
1. Preheat oven to 350°. Slice 1/4-inch off the top of each garlic head. Place garlic, cut side up, on a 12-inch square sheet of aluminum foil and drizzle with oil. Wrap garlic in aluminum foil to seal. Place directly on oven rack; bake for 1 hour. When cool enough to handle, squeeze out garlic into a small bowl. Makes about 1/2 cup.
2. In a large skillet, cook bacon over medium-high heat for 8 minutes or until crisp, stirring occasionally; with a slotted spoon, transfer bacon to a paper towel-lined plate.
3. In a large saucepot, heat potatoes and enough salted water to cover by about 2 inches to a boil over high heat; reduce heat to medium and simmer for 15 minutes or until fork-tender. Drain potatoes; return to saucepot.
4. Add butter, cream, and garlic to potatoes; with mixer on medium-high speed, beat potato mixture 3 minutes or until smooth. Fold in cheese, pepper, and bacon; serve garnished with chives, if desired. Makes about 6 cups.
